Hey man, I’ve opened oysters for 10 years and I have a few tips for you when opening. When you are opening you don’t want to move the knife up and down, but side to side (it’s not a can of paint) , reasons for this are because you can potentially break the knife or break the shell and if you break the shell that knife will go straight into your hand (take it from someone with the scars to prove it😅). Also when you have the oyster ready and free from the shell you want to flip the oyster. 1 it’s on it’s presentable side as it’s known in competition setting but also you don’t know if there’s shell, sand or impurities underneath that which are potentially going to impact your experience or potentially make you ill. Also when you’re opening by moving the knife side to side you’re engaging your shoulder and not your elbow or wrist which overtime is better because you can potentially damage your elbow or wrist because of the strain. Vinegar/mignonette are my favorite way of eating oysters. To me, the lemon is too strong and contrasting compared to the delicate flavor of the oyster. When oysters are cooked, then I'll put some lemon on it. I guess it may be possible that the flavor of the oyster becomes more stronger when cooked.

You gotta try fresh gulf of Mexico oysters.
Also put them on a bbq pit and cook them until they start to open. Add lemon and Louisiana hot sauce
