- I had the pleasure of spending my birthday this year at our beautiful Oregon Coast. And for my dinner, I ordered this Vegan Banh Mi Sandwich from a local brewpub. It was so good I decided to recreate it myself!

This was so good. Added a few slices of grilled tofu in your marinade as well.
Mayo remoulade was out of this world. I added 5 soaked cashews to it. Thanks.
Make this all the time. Also added sliced grilled tofu with mushrooms. I mixed cashews with the silken tofu for mayo.

Another fantastic recipe. I've been to Vietnam 10 times between '93 and '01 and I'm going back next year so I'll be sampling a bunch of these over there. I'm going to make some of these here the way you figured this out to compare. For anyone who wants to see if their local Vietnamese noodle place makes these they are usually called "Banh Mi Chay" for Vegan Hero sandwich. They are a variation of the original meat based "Banh Mi Saigon" sandwich.

Update from my first comment: we've made these twice now and they're sooooo good! I told my daughter these are 'deliciousness on a bun'. I used pre cut baby bella mushrooms. The marinade and the dressing are super easy. Thanks again for figuring out the recipe and posting!

I'll definitely try this! There's a new Vietnamese restaurant up the road from us that has these sandwiches for $5/ pop. They're good, but the tofu one is very oily. These don't look too difficult [even for a lazy cook like myself]. Thanks for posting! Re: cilantro... I tell my kids that cilantro makes the world go round [not money, not love; it's actually cilantro!]
