Italian Chocolate Amaretti - Almond Cookies: (e49)

- Buon Giorno Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), creates the most delicious amaretti cookies - soft & chewy on the inside, crispy on the outside. You will love them! To start, mix the dry ingredients:
- 1 pound of almond flour, about 4 cups
- 1/2 pound of sugar, about 1 cup
- 1 teaspoon of baking powder
- 1 tablespoon of cocoa
Separately, in a mixing bowl, add 3 egg whites, a pinch of salt, and 2 teaspoons of almond extract. Whip until firm peaks form.
Then gently fold in the dry ingredients into the egg whites. Optionally, add in a shot of espresso. You want the dough to be soft, but the liquid should be fully absorbed.
Then using a scoop, or a tablespoon, start to form dough balls. Roll until smooth and uniform then roll them in sugar and secondly in icing sugar.
Place the cookies on a baking sheet with parchment paper. You can decorate the cookies with toasted almonds, chocolate chips, coffee beans or cherries, or feel free to leave them plain if you prefer. Lightly press down as you insert the amaretti decoration.
Bake at 325F for about 15 minutes. You want to check the cookie base and ensure it has slightly browned. YIELD: 36
Place the cookies on a rack to cool.
Then enjoy with a cup of coffee or espresso.

@@sausanhamed3823 hmmm good question. I'd say the almond, but that might be because the consistency was that typical soft/chewy almond texture. If you prefer more chocolate, go with more cocoa. If you prefer more almond, I would add extract. In my case, I like for the espresso to come through.

Hi Marianna - salute a Australia!! We use blanched almond flour. We bought it at Costco.
Ciao nonna, I would like to make this receipt. As I leave in Europe, we do use grams and sizes of cups are different . According to google 1 pound is 454 grs and 1 cup 240 grs. For your receipt it is necessary 1 pound of almond flour (454grs) or 4 cups ( 960grs) . So I’m confused . Do you have the right measures in grams? Mille Grazie Yolanda

Interesting idea. I’ve never tried it. These cookies won’t absorb espresso in the same way so it will be crispier. And the flavour will be different because of the almond. But almond and coffee is a good combination. If you try it let me know how it goes. 🤩

Hi nonna,I want to make amaretti using the whole egg.Do you have a recipe with whole egg? Also i don't have a fan oven,will that be ok?

Buon Giorno SR ... not to worry about the fan oven; that's fine. But re the whole egg, I can't say I have ever been happy with the result. I do suggest you just use the whites. I always use up the yolks in a frittata, or as an egg wash when I do cutlets, or in lots of other ways.
Hi. I just made some a few days ago. I use entire egg, add instant coffee powder, cocao, ground almonds.
It's funny my grandchildren call me nonna mia too. When they were babies they couldn't say nonna Maria so it was nonna mia and even today they still call me nonna mia.
Would like to try this recipe as well.
