I freaking love onions! I just watched your summer fish soup video and then this. I think as an onion-lover that I would combine the two recipes and just plop some cod fillets or something on top of this and make it a meal. Also I have a big stash of dried chickpeas that I've been instant-potting like you suggested, so maybe I'd throw in a few of those too if I had some cooked ones in the fridge.
Great recipe. I actually have all those ingredients on hand right now. Yea!! Except for savory. I've heard of that a long time ago and am going to go on the hunt, really curious to see what it tastes like. Happy to see this is a long vacation, I think, unless they were both filmed together.
I like this recipe. It would be easy to make it vegan, just sub out oil for the butter. It would be great in the fall or winter. Since spring is here and summer is coming, do you have any quick full meal deal salads or light meals you could recommend?
I’m all about the hearty salads right now! I always start with something really substantial like chickpeas, cooked grains or beans, or chunks of roasted tofu or sweet potato - then just chuck in a few handfuls of greens, a fruit component (usually raisins or apples) and a bunch of nuts or seeds. Keep it simple with balsamic vinegar, salt, and olive oil and dust the whole shebang with nutritional yeast!
I love raw carrot but I hate it cooked, even in beef stews so I'm 100% down with the grating of the carrot. If I grate it and add it into my stuffed bell peppers and sauce, I never notice it even though there are about two huge carrots in there.
When they are grated, you still get that carrot taste but not concentrated in big bites as you do with thick cut cooked carrots like in stews. I should start grating carrots into my beef stews!

Hahah! Gotta call in backup! Well it’s hard to pick favourites! But I’m a really huge fan of Lutenitza (I don’t think that’s how it’s spelled)! It’s a bright red veggie spread that you slather on soft white bread and top with briny white cheese. It’s THE best thing in the summer. I’ve never made it but maybe I’ll do an episode for it!

If you can’t find it dried, you can probably find a fresh plant from a garden store! Use it fresh or dry some out
