It simply disconnected you from Xbox Live because the internet connection was cut. You could just turn it off, take out the ethernet cable, and turn it on. Same thing.
Nothing would happen during the download of the update file. Problems could occur during interrupted install of the update due to flashing the firmware. Even then it tends to have a backup to revert to upon reboot. The first wouldn't do anything tho.

It takes so long because it is running a full Windows 10 OS. It is admittedly stripped down and heavily modded, but it runs on the same kernel and is thus at the corte the same OS.

Think Xbox has 2 boot sectors on the hard drive and only changes the boot sector once the update is completed and the console has booted with the new update.
So, let's say under the worst possible set of outcomes that your Xbox One doesn't work anymore after disrupting the update process. Then what? Are you willing to risk buying a new console (assuming you don't have an extra one) just for the sake of curiosity? Seems rather foolish if you ask me. You must have a couple hundreds to spare if you're willing to take such a risk.
If it bricks its an easy fix. You just have to do the safe mode boot. My Xbox One bricked a week or two ago while I was downloading a preview update. Did the safe mode reboot and no problems.

So i did the factory sade mode reset not the hard reset, the hardset failed, and everything worked after it gfave me the option to factory reset the console. I have mine setup to update automatically and since I have it where it never fully turns off (I guess like sleep mode) it always updates in the middle of the night it seems. I know this because my Thrustmaster wheel always recalibrates after it's done and wakes me up.

Unplugging will do nothing while an updating is downloading. Now if its in the middle of installing said update (Dashboard) then that's when the problems happen.

You need to unplug it while it's applying the update. That's when it's actually modifying files and can cause problems if you lose power while system files are being modified.
