    Loving meal prep Mondays! Cutting across the grain of the chicken … a tip I’ve never heard before. The olive oil on top of guacamole is brilliant! Love the tips you include. Can’t wait to try this one.

    I just finished cooking this for my father’s lunches this week and made a small two spoon plate for myself to taste. I’m in love. Tastes so gorgeous and the refried beans were even better than I thought. Two hours of prep, cooking and cleaning but I’m a happy gal.

    Tip after cooking this dish for the 3rd time:
    1. Use +1 bell pepper
    2. fry the chicken after you fried the vegetables. This gives you better control over the tenderness and avoids too much water in the pan
    3. Maybe add an addtional can of beans as dividing it into 5 portions is a bit too less food for me.

    I highly recommend that folks look for Mexican oregano as opposed to Italian oregano for a more authentic flavor -- There is a difference in taste and it's highly worth it to try and get! Check your ethnic food section at your local grocery, check a grocery that caters to and is often patroned by Mexican people, or order it online.

    quick tip: use roma tomatoes for guac and take the inner part out. This helps reduce excess moisture. Also, add some lemon juice. I do not use lime as its a little tart and acidic while lemon is still acidic but a tad sweeter. Another great thing is to just make pico de gallo and then when you have avocados on hand you can mix them together for guac.

    This looks amazing! Always been intimidated by meal prepping but this really makes me want to give it a go. Not sure if I missed it but I'd love to see the calorie count for the whole batch included so I could split it up into smaller portions to have alongside other things I make. YUM!

    What we used to do at Papa Murphys to cut peppers is to press the stem into the pepper with both thumbs and then take it out and shake out the seeds. It makes it super easy to get as much of the pepper as possible and is kinda fun.

    Bro I really loved this recipe, tried switching up the chicken for turkey breast and added a tablespoon of sour cream on top of the beans and it turned out amazing. I really appreciate this vídeos so keep making them and I'll keep watching them.

    I actually found your channel through these meal preps! I love the regular recipes but I simply don’t have the time of day to do that everyday. Meal prepping is something that I think is necessary for my schedule. Can you please make meal preps on breakfast and lunch? Btw I love the clean aesthetic look of your videos!     You have improved your editing, nutritional information, and convenience for your recipes. Great work!
    Also this is really good meal prep. No need for bland white rice and overcooked chicken breast when this satisfies the macros, tastes good and has fibre as well.
    Personally, I like to have some roasted capsicum with roasted onions as a sweet addition as well. But it's hard to find a fault with this recipe, it's that good 👍

    This meal prep has more than one vegetable
    I have a Hiatus Hernia so I will have to omit the lime juice, chilli powder and Jalapenos because I can't have chilli, hot and spicy food citrus fruits or vinegar.
    Hoping it will still be nice to eat Saturday night with leftovers put in air tight containers and put in the freezer.

    Mexican here, try your guacamole this way: Take you aguacate and put in a bowl, smash it to get a pasta, take you second aguacate, and before taking off the peel, use a knife to carve little cubes in the aguacate, take a spoon and take off the pulp, mix it with the rest of the guacamole, add tomato, cilantro and lemon... ENJOY.
    PRO TIP: You can put a little of water, salt and some chiles in a blender to get an "agua chile" and mix it with the rest of your guacamole.

    I made this yesterday for the week ahead.
    I found that there wasn't enough beans for my personal taste so I topped the dish up with home made Mexican rice.
    I've just has my first portion along with half a tub of shop bought guacamole and all I can say is that this is truly delicious. I'm really looking forward to lunch for the rest of the week.

      Don’t the beans count as a carb? so that would mean with the rice that meal would have 2 portions of carbs and wouldn’t necessarily be a low calorie meal

      @@Shannon627 yeah, it would mean that but the beans ended up being quite a small portion so I see them both together as one portion. I used kidney beans so 20% protein in the beans.
      I've lost 16lbs in the last two weeks doing meal prep and of course some exercise.
      Gives a lot of structure to your eating knowing you already have delicious food at home, no excuse to go buy and eat rubbish food 😀

    Nice recipe! I like to flash fry my veg after cooking the chicken so they stay crunchy just for a bit of difference in texture. Will definitely use this as a meal prep in the future though!

    What are the 1L containers you use? Thank you for doing this! Lunch is my worst meal of the day as I eat out most days easily consuming 1500 calories. This will make a huge difference for me!

    Looks great! One question - are you sure the nutritional information at the beginning for the chicken fajitas is correct? I haven't done all of the calculations but I was skeptical that that much food could be 176kcal per serving. If it's 6g fat, 44g protein, and 12g carbs - it would have to be at least 278 kcal

      Thank you! It’s all ran through a nutrition calculator which is highly accurate. I’ll run it again and make sure it’s correct but it’s really reliable. Leave it with me and I’ll get back to you

    Would you use the same spices if you were to do steak fajitas? And wgat type of steak you think would be best for steak fajitas?.. btw great video!!

      Definitely works with beef. You'd need a high quality steak for it to be nice and tender such as scotch (Ribeye) or eye fillet (filet mignon)

    These videos are great. Can i make a suggestion. When talking about ingredients and measurements could you add text on the videos so when we are cooking as we follow the video, we can pause it, and see the amount and ingredient on screen whilst we grab it from the cupboard?

      So glad you’ve enjoyed the past couple recipes! Fish sauce is an underrated ingredient, especially in western style cooking. It really can change a dish into something special 🤤👌

    I find adding spanish or a chicken style rice really adds to the flavor and texture while adding a little more calories for the bulking season
