- Beijing jianbing (北京煎饼) is a kind of breakfast crepe widely sold in Beijing. Similar but smaller crepe is also sold all over China. The motorized cooking plate speeds up the process for larger crepe and is believed to have originated from Shandong. The red sauces are sweet flour sauce and chili sauce. The crispy square is some kind of fried crisp.

There really is nothing quite like a good ol jianbing to keep you going, oh yeah, except for some jiaozi (dumplings)

This is Tianjin Crepe, the origin is Shandong Crepe.
煎饼馃子是起源于天津市的一种街头小吃,在各地改良後流行,主要用作早餐。
其中的煎饼来自山东煎饼,但是天津煎饼的原料与原本的山东煎饼不同,并非以玉米麵而是以用小米和绿豆麵为主,同时视制作者不同可能会另混合少量玉米、大米或小麦粉中的一种或几种,与汤水混合制成面糊。
山东煎饼本来是粗粮细做的主食,而煎饼果子是用细粮代替粗粮形成的一种街头早点,天津拥有绝对的原创版权。
I love these... it's like China's version of the hotdog in the sense of its ease of making yet you can still get a good one and a bad one and a really outrageously, awesomely, heavenly one! :) After I was introduced to these the first time, I couldn't resist going back for 2 or 3 per day! :)
light487 Are crepes as bad as hotdogs as far as quality of ingredients goes? This all looked pretty healthy or do I just have a really shitty diet?! I hate hotdogs but my mouth was watering watching this :)

I had "socca" near Nice, France, recently. It was initially a breakfast for poor street people and is really just water and chickpea flour cooked on an oiled pan in a superhot oven. Really good, and not too far away, in Livorno, Italy ("Leghorn") they eat "torto," which is the same thing but they allow the "gram flour" (chickpea flour) and water time to ferment & there is rosemary, olive oil, sea salt added. Ancient Estruscan food! Predates pizza made with wheat flour, e.g.

强行科普一下,这个是山东煎饼,很多玉米面,把面饼和鸡蛋摊好了,拿下来给另外一桌的人刷酱加薄脆。煎饼果子是天津的,所有的动作都在转圈的锅子上完成,一人就行,而且加的是油条,就是果子。

山東煎餅一般不是直接出鍋就吃的,為了當乾糧保存,也是不加什麼雞蛋的,就是純糧煎餅,多都是買回去當主食就菜吃的。做出來的也是很光滑平整的,視頻裏還疙疙瘩瘩的還加雞蛋的了。這是即食型並非原味了。
這玩意好東西,不用冰箱就很能保存,上回帶了一包回家,南方人吃不太慣,有一些沒吃給忘了,一月後收拾才發現,看也沒長毛什麼的,嘗了一口,還行。弄點鹹菜就著吃了,有點硬但還能啃,人安好,還活著。
還有就是新疆的饢,上次在外旅遊,買了兩個,吃了一個,還有一個壓包底下給忘了,兩周後才發現,以為幹的像普通燒餅一樣不行了,但不死心,還是咬了一口,沒想到酥的很,就像當天的冷饅頭一樣,根本不用費力,水都沒有就,也沒菜,我就吃了這塊饢,怪不得看電視上那些沒牙的新疆老頭都抱著饢啃,真是乾糧之王呀,野外探險背一包饢再加上高富帥的切糕,無敵開掛了。

I never saw them make it like this when I was there.
It's more often seen in northern provinces. Southern Chinese prefer something else in terms of fast & cheap street snack.
Ya I ate it many times in Beijing they just never used a spinning wheel.
Social Sketch There are actually two kinds of ways to make jianbing. One is the way the video shows that it was made by a spinning wheel. Another way is more like a French crepe making, which was spinned by a wooden shovel.

Deepak Anand It's Beijing Pancake.
Step one Mix flour with water and stir
Step two turn on the stove and pour the mixture in the step one evenly onto a rotating iron pad(or a large frying pan) covered with cooking oil
Step three flatten the mixture in the pan with cooking shove and add the egg
Step four shove out the pancake after it is fully cooked, apply soy sauce, Korean Doenjang or chili sauce onto the pancake and splinter slices of spring onion
Step five add some of your favorite food which have a rich flavor, such as ham, fried fish or salted chicken into the pancake and wrap all of them into roll

Its fried dough or 薄脆, made from flour, baking powder, and salt. Similar to Chinese bread sticks, just different shape.

Jian bing is made from green beans or millet or corn whereas dosa is nade from fermented rice
