  • These potatoes are like a beautiful marriage between a french fry and a roast potato. You've got a thin and beautifully crispy crust and a soft and fluffy inside. Chock full of intense flavors and umami. You may never want to make potatoes any other way, ever again.

    Ingredients you'll need:
    3 pounds yukon gold potatoes (small)
    1 whole head of garlic
    3 large sprigs of thyme
    3 bay leaves
    1/4 cup extra virgin olive oil
    flakey or kosher salt for seasoning
    extra virgin olive oil for drizzling
    For the Mexican Inspired Variation:
    crumbled cotija cheese
    pickled red onions
    fresh picked cilantro
    extra virgin olive oil for drizzling
    For the Loaded potato version:
    sour cream
    cooked bacon
    sliced chives
    grated cheddar cheese

    Omfg! I used whole peeled garlic (packaged), dried thyme, and a combination of baby red and tiny gold potatoes. That’s all I had on hand. My guys (50 y/o blacksmith and 15 y/o typical teenager) declared them to be the BEST POTATOES EVER. They stood in the kitchen and ate most of them with their fingers before dinner was served. Thanks, Josh!

    Some suggestions I found worked better for me in practice:
    1. Boiling the potatoes for only 5 minutes.
    Since we're roasting them for 45 minutes, there's no reason to fully cook them with the boil.
    2. Instead of covering the potatoes in garlic, herbs and olive oil, try infusing some oil (not olive oil, but sunflower oil or vegetable oil, something with a high smoke point) with the garlic and herbs (just fry the garlic and herbs in a pan with the oil, strain it, but keep the garlic and herbs to add to the potatoes at the end) and then toss the potatoes in that oil and put them in the oven.
    This is because the olive oil, garlic and herbs will all burn in the oven at that heat in that amount of time.
    I hope these tips help and these really were some extremely crispy potatoes! Oh, and don't forget to flip the potatoes for MAXIMUM CRISPNESS!

    Totally yum!!!! Another way to get ultra crispy potatoes, par boil them, sprinkle polenta, toss vigorously, tip (carefully) in a roasting tray, pre-heated with goose or duck fat. Fat MUST be hot, and your potatoes will be ultra crispy! But I’m sure you already knew this trick! 🙂

    2:48 in Portugal we do something called 'batatas a murro' where instead of using the rolling pin technique, you literally punch the potatoes on the tray... Both work but I like the second one more, respects tradition and it is fun
