  • Coconut Milk Bread Loaf|Apron
    Bread flour 350g / 2,1/2cup
    Caster sugar 20g / 3Tbsp
    Sea salt 2.5g / 1/2tsp
    Instant yeast 4g / 1 heaped tsp
    Coconut milk 200ml
    Water 45ml
    Coconut oil 30ml
    Unsweetened shredded coconut as needed
    Oval shape mold 22x6x10cm 2
    Bake at 180°C / 350°F for 17-20 minutes

    This is my understanding of the recipe from watching the video (American measurements). I'll let you know if it works!
    2 ½ cup Bread flour
    3 Tbsp Caster sugar
    ½ tsp Sea salt
    1 heaping tsp Instant yeast
    ¾ c to 1 c Coconut milk
    3 T Water
    2 T (warm to liquid state) Coconut oil
    Unsweetened shredded coconut as needed
    2 Oval-shaped bread molds
    Put flour into bowl. Make 3 wells in flour.
    Put sugar into one, yeast into another, and salt into the third. Mix into the flour. Pour in coconut milk, water, oil.
    Stir (lightly knead to blend with spoon). Rest 15 minutes, covered.
    Knead, pull, roll and fold till texture is bouncy and firm.
    Proof at room temp 1 hour (should be doubled in size).
    Lightly flour. Dough should be slightly sticky to the touch.
    Divide into two.
    Lightly flour, knead into 2 balls. Lightly flour, roll into oval.
    Flatten edge of one side oval with fingers. Roll from other side into a rolled shape.
    Pinch flattened edge together and lightly roll to seal.
    Grease both oval molds (spray is fine).
    Slice each roll into 8 even slices. Put sliced rolls into pans.
    Proof 1 hour, covered with a towel.
    Brush both rolls with milk and sprinkle on shredded coconut.
    Bake at 350°F for 17-20 minutes. Tip out of pans onto cooling rack.

      They turned out well. The only problem I had was getting them out of the molds, so be sure to oil them carefully, all around the bottom.

    Folks, use a bench scrapper to help knead as it is a very sticky dough. Also, took me a full 13.5 steady hand kneading to get the dough to behave like the video. Don’t give up. It will become manageable. This is one of the best breads I’ve ever made!!

    Another perfect recipe! Thank you for sharing! I made this yesterday. It was so easy to do yet the bread is very flavorful and soft. I love this! I used a rectangular pan since I don't have the oval pan. Stil the loaves turn out beautiful!

    I like the fact that there's no talking! Just the process. Very easy to follow. Just one question why did you make 3 holes for each ingredient then individually mix them? Is there's a reason for it?

      Hi, yes, avoid putting sugar and salt together, otherwise it will affect yeast activity

    По моему скромному мнению, рассуждаю, хлеб надо было еще допекать до полной готовности с подрумяненными бочками и низом. Тогда и структура мякиша была бы гораздо пышнее и нежнее, чем та получившаяся вязко-сыроватая структура, а за труд и внимание к приготовлению ставлю зачет.

    It looks delicious. I have a question regarding the dough; how many times are you allowing the dough to rise, and what is the length of time are you to allow it to rise?

      Hi, total 2 time allowing the dough to rise. About 60 minutes for each, depending on the activity level of the yeast, climate temperature and humidity are also the main factors.

    Apron, I made the bread today and it was delicious! But mine looked quite pale compared to yours. I baked the bread at 350f for 20 minutes and the top didn’t go brown. Should I increase the oven temperature or lengthen bake time? Thank you!

    I've not made this before but tried it and it's really nice. A Chinese friend of mine took me to an area full of Chinese restaurants and desserts and he told me that this bread is very popular in his country. He really wanted me to try food from his culture and I tried this bread for the first time. It was warm, soft and airy. It was seriously so good that I took another one home for my son to try xx
    The shop lady said it was made from condensed milk and desiccated coconut, but you've not used condensed milk, is that not a key ingredient?

      There is a recipe for Condensed milk bread . Either if you watch on computer , down the right side more recipes will.come from this Sight. ..However each recipe I am presuming maybe slightly different. .I would like to try her condensed milk recipe but will purchase Lactose free condensed milk and check the recipe when I have purchased this item.
