    I have discovered that many (red) Zinfandels as well as Conundrum’s red blend goes well with my spicy vegetarian red chile enchiladas.

    I just put together a first draft of a wine and food pairing menu. It was really challenging because I wanted to serve fish as main course. This is definitely worth learning more about.

    For me light fish white wine, heavy fish Pinot Noir, spicy food white wine, steak with pepper sauce cab sav and steak with juz shiraz.

    I dont understand why sweet cakes pair with sweet wine like a late harvest insnt too much sweetness instead of pairing with an acidic wine

    Chilly heat is a toxic couple for Wine: it can be aggressive and takes all the space and attention. No complex good Wine deserves Chilly heat food. Take a nicer food for it! Pair that chilly with some stupid sweet soda or boring water, no offense will be done. Bitter food can be difficult to marry, but it will be always interesting!
