My variation of this uses smoked sausage, onions, (Lima beans and corn ala succotash) , and Okra...I roast 3/4 inch dice russets or Yukon potatoes separately to get a crisper exterior then add them at the end...This recipe is a great way to use my abundant Okra production and is one of favorite things to eat from the garden....with the smoked sausage it makes a complete meal by itself.

Add a small amount of leftover coffee to your beef roast - crock pot, around 1/4 c. Adds another layer of flavor. 👍
