Sadly, by the time you get every gem and complete the quest, you will already be filthy rich unless you use some kind of economy mod or something to make money making difficult.
If you want to increase your sneak early before you leave the first dungeon who ever you sided with and get to the part with the bear, just sneak behind your helper and keep hitting them in the back they won’t get aggro towards you so you can keep doing it until it’s at a high enough level
While I tend to stay away from min-max building, I never considered altering which Guardian stone to use for crafting. That's a good tip for any playstyle.

It's more of a mage build to be honest. No thief wants conjuration, or smithing or enchanting. Those aren't thief skills. Thief shouldn't even have light armour, one handed or arcery, but if you actually want to play the game a thief/assassin build should be: One-handed, Light Armour, Archery, Alchemy, Sneak, Pickpocket, Lockpicking, Speech.
They enhance a thief because to get the best light armour you need smithing and thieves also go invisible in the game and Conjuration is just for bound bow archery is a thief skill
As I generally play a stealth based character in most of my playthroughs I can say with absolute certainty that the key skills you want to dump points in are Enchanting, Alchemy, Archery, Illusion, Sneak, Light Armor, and lastly Lockpicking. Fortifying your enchanting makes your gear better obviously. Alchemy is to give you advantages like healing, fortifying illusion, and of course poisons which are a staple in stealth as you will be relying heavy on them to get the maximum damage. Light armor is for the stamina regen and survivability. Archery is for thinning the heard and applying your poisons early in a fight. Sneak is for picking off enemies while remaining undetectable and getting maximum damage output. With sneak, Archery, and alchemy as well as boosts from enchanting, you can tackle legendary difficulty. Illusion is namely a very reliable tool to give you the edge while leveling sneak for muffle and invisibility but also for calm and fury spells. Stealth builds need utility that's why we need all these tools. But lastly is Lockpicking. You need to have access rather it be doors, or chests, and it's a nifty tool to have in later stages. However, I disagree with a few things here. First, as speech is a great skill, as a member of the thieves guild it can become irrelevant as you can bs your way out of crimes. It's only real use is with money which isn't hard to come by but can also be bypassed by, you guessed it, enchanting and Alchemy. Pickpocketing is generally only good for keys. The poisoner perk is handy but not essential. It's the carry weight you want mostly. Smithing isn't exactly good either besides arcane enchanting. Again boosts with alchemy and enchanting. But to each his own. But if I may make some tweaks. Aside from a handful of precise perks I mentioned prior, I would like to say instead of bound weapons, why not utilize the summons as a means of distraction to tank hits while you pick enemies off. Other tool I'd like to mention is runes. Traps are a good breaker when enemies do find you but stumble on a carefully placed rune by your feet. Also alteration is good for getting some extra armor but also for enemy detection. As for some other things, while elemental fury is good, slow time, aura whisper, and marked for death are what you want for stealth. On another note I'm mildy surprised becoming a vampire wasn't added simply for boost to illusion and sneak. The blade or woe and mehrunes razor deserved to be mentioned as they are great weapons. But also and lastly, if you decide to use the aetherial crown as a gear option, I'd recommend the Lady and Lord stone for regen and survivability

By far the most valuable potion in Skyrim is garlic, salmon roe and nordic barnacle. Trouble is salmon roe and nordic barnacle are hard to come by. Unless you know where to look for them.
The body of water outside Bronze Water Cave has around 20+ Nordic Barnacles, simply follow the entire shoreline looking both under the water and along it and playing as a Bosmer (Wood Elf) and using their Command Animal power is possibly the best and easiest way to harvest Salmon Roe ("if" you are playing on SE or have the DLCs) one shout properly timed and then picking them all up generally is far easier than catching them by hand or flaming them.
