That looks like some good eating. When we made our homemade decades ago it was mostly variations of traditional. We spent more time on different hams than we did on sausage and bacon.
I used to do Hams and such, but just ain't ever been that crazy about that much salt. To me traditional smoked meats was more for preservation. I think that and it's very time consuming is why people don't do it as much as they used to. Also to me Wild hogs don't do as good because their not as tinder. I've tried ham and bacon off them and it just don't work for me. I'd do domestic hogs in that case. Thanks for watching!!

McCains Farms used to sell everything you need. You can call them tomorrow and ask. I bought 5 lbs from Big Star in Farmerville. They had 2 packs left when I bought it. If those don't help, id order from Williams or someone online.

We had a ridiculous amount of rain in a three day stretch right after the ice melted. Been tough on our trapping efforts, ready for dryer conditions!!
