    Ingredients
    2 lbs fish (whole snapper, parrotfish, or fillets; cleaned and scaled)
    1 tsp salt
    1/2 tsp black pepper
    1 tsp garlic powder
    1 tsp paprika
    1/2 cup all-purpose flour (optional, for a crispy coating)
    Vegetable oil (for frying)
    Use any season of your choice*
    For the Escovitch Dressing:
    1/2 cup white vinegar
    1/4 cup water
    1 small onion sliced
    1 medium carrot, julienned or thinly sliced
    1/2 bell pepper (red, green, or yellow), sliced into strips ( optional)
    2-3 pimento seeds (allspice berries)
    1 Scotch bonnet pepper, thinly sliced (adjust for heat)
    1 tsp sugar ( optional)
    1/2 tsp salt
    1/4 tsp black pepper
    1 clove garlic, minced
    1 sprig thyme
    Instructions
    1. Season the Fish
    Clean the fish thoroughly and pat dry.
    Season with salt, black pepper, garlic powder, and paprika. Let it marinate for at least 30 minutes for better flavor.
    2. Fry the Fish
    Heat vegetable oil in a frying pan over medium-high heat.
    (Optional) Coat the fish lightly in flour for a crispier texture.
    Fry the fish until golden brown and cooked through (about 5-7 minutes per side). Drain on paper towels and set aside.
    3. Make the Escovitch Dressing
    In a saucepan, combine the vinegar, water, sugar, and salt. Bring to a gentle simmer.
    Add the sliced onions, carrots, bell peppers, Scotch bonnet pepper, garlic, pimento seeds, and thyme.Let the vegetables soften slightly but still retain some crunch (about 3-4 minutes).
    4. Assemble the Dish
    Place the fried fish on a serving platter.
    Spoon the hot escovitch dressing and vegetables over the fish, ensuring it’s well coated. Allow the fish to sit for a few minutes to absorb the flavors before serving.
    Serving Suggestions
    Serve with festival (fried dough), bammy, or rice and peas.
