If you are experiencing water flowing from your steam wand it can be one of three things 1. Probe faulty as you suggested. 2. Faulty refill valve - Not closing 3. Faulty main opcb

Yes it is fine to backflush your machine using the stop / programme button

were the same our coffee machine display is empty only shows the logo..
