Preserving Food in August | Every Bit Counts Challenge

- The garden is at peak production and is just exploding with food, so I'm going to show you some I'll be preserving in August that will feed my family year round. August in my Missouri garden means that I am harvesting tons of tomatoes, peppers, squash, zucchini - all of the things, and if you don't have a plan the abundance can become overwhelming! Today I was able to use some of that harvest to make stewed tomatoes loaded with okra, peppers, and onions, and a potato soup starter to make dinner time easy! Hopefully this video gives you inspiration and encourages you to preserve some of summer's goodness, so you too can be eating from jars all winter long!

I have never canned before but really want to try my hand at it. How exciting it must be to know you have 14 meals basically done for your family.
Start out with a jam! If it doesn't set well you can use it on ice cream!
I wish my tomatoes were coming in now. We had such a cool June that mine are behind. I’m loving all your beautiful produce!! Also I dehydrate the tomato skins and powder them. They’re so great in a million ways!

Those onions are something to be proud of. They never get that big or looks so good in my garden. We live on the coast just about 100 miles above Sydney, Australia and the weather, in the summer is humid and can be hot but mostly bearable. Our gardens need watering every day usually but we do get rain during all the seasons. Never has my husband or his father produced such wonderful looking onions like yours. They are wonderful. I have never tried Okra, it is not a popular vegetable here and have only seen it more recently. I am told it is very slimy and this has turned me off it, what kind of flavour does Okra have and what type of use do you put them to.
It does have a sliminess to it if not cooked correctly. My favorite way is picked okra. You should try it, it's easy to grow and delicious!
You got a lot done and then had friends over! Wow! I've never used my pressure canner but will have to soon. I need to can some meat to clear some space in my freezer. I'm a bit nervous about it. You're wearing another shirt I love with the chickens!
You should pull it out and try it! Once you do it a few times, you won't be nervous! My shirt is from the love in faith website.

Just found you channel today. Love the looks of all your jars. Could you tell me how you use the tomato and okra and the carrot, potato and onions. I guess it's like a soup starter.
It's tomato, okra, and pepper. I'll serve it over rice with smoked sausage. The potato carrot and onion is a potato soup. I'll heat and blend with milk and cheese, maybe add ham or bacon.
Hello, I just found your channel a new subscriber, I was just wondering what kind of pressure canner you have, it looks so simple to use at the moment I only do water bath canning, so saving for a pressure canner. Loving your videos keep them coming.
Well you make Pressure Canning look easy. I am new this is my 2nd video, and I think I need that Ball Canning Book. Maybe then I won't be afraid of killing myself or someone else. Born and raised in Inner city poor but moved to the country farm land and support only my local farmers. I can get bulk anything from them. My Butcher will prepare anything I need. Next purchase must be a food processor, I only have a mini as I am 1 person, but I give to everyone. Thank you.
I used to can but am 78 now and limited. Pressure canning is very easy if you just pay attention. Go by the ball book until you get a feel for it. Then enjoy.
