Harvesting Beets: When, How, and Tips for Storing Beets

  • Learning how to grow beets is pretty easy, but a common questions is when to harvest them. Because they grow under ground, we often can't see their progress.
    We don't want to risk taking our beets out too early as they won't have formed solid beetroots, but if we take them out too late they'll be woody and not great for eating. In this video we talk about the ideal time to harvest beets as well as some beet storage info.
    As an added bonus, I pulled out my favorite beet variety from the garden, the Chioggia beet. These are absolutely beautiful. I also go into a bit of beet benefits, specifically beet tops.

    The stems are wonderful for salads, smoothies, basically anything you do with spinach. We pull leaves off throughout the growing season, not too many as to disrupt the plant itself. Then we store them uncleaned in a glass container with a paper towel underneath the leaves and one over the leaves before closing it almost air tight. It's remarkable how long the leaves stay fresh. Rinsing in cold water before using them in recipes also helps to liven them up. When we're done harvesting the beets, we clean them and cut them up in small chunks to freeze. These can be used later in salads, smoothies, cooked, etc. Beets are a nutritional superfood, and a great energizer.

    Mine wound up almost fully out of the soil and were much bugger.
    I transplanted them this year.
    Try some high phosphorus fertilizer to bulk up the root.

    Dehydrate,grind it to a powder,use 1 tablespoon daily &drink ot with a taste of apple cider vinegar in a bottle of water.thats the recipe i use to control hiblood pressure.it works &gives me energy.i was taking a bp pill that made me very ill.cheers to the veggies

    Was really looking for long term storage advice for over winter.
    The Chioggia happens to be what we grew last year as a test with
    Detroit Reds. This year just Chioggia's as the flavor is just amazing.

    Awesome lookinG beets!!! I am growinG some on my apartment balcony and I can hardly wait to try them!!! If you like...you could make beet leave cabbage rolls!!! After you aRe done prepping them...simply pour some cream over top of them and cover with foil!!! Cook at 350° until they are done...about 30 to 40 minutes depending on your oven!!! Then enjoy!!! Happi Summer fellow gardener!!!✌😇🌎🌻😍🌻🌹🐣🌹

    I cut up the beets and start them in a steamer...then I slowly enjoy cutting the greens and a few minutes later add that to the steamer... I put my home made fat free dressing on top and it's delicious...anything out of the garden is delicious....

    This year I tried a new recipe for picked beet stem relish. Just mixed it with some Hungarian peppers and some garden onion canned it and bam great for sandwiches or a dip with cream cheese. No waste here.

    I did store 3 beets that I bought from the store, to see how long they would last in the fridge and they did last several months, like 6 months easily, until they got spoiled, it was a test. I don't normally do that.

    I have a new first time grower question. I planted seeds in about 4" plastic containers, then in a tray. They sprouted nicely, but the stems are now about 2" long and spindly. Is there a way to fix that so they are stronger?

    I'm new to container vegetable gardening and using grow bags on my uncovered very sunny porch. Growing beets for the first time, bought 3-5" plants and planted end of May. They are just about ready to harvest. Its June 21st in southern new england, 90 degrees today. Suggestions for what to plant in the container after harvesting these? It would have to be started in the container which could be moved to shadier spot if needed. Love your videos. Your one on shade tolerant plants inspired me to build a raised bed in a formerly neglected corner.

      you have to experiment one year with multiple seeds, Like I did I bought a bunch of seeds a experimented with full sun to partial shade. Some died some lived and some harvested with amazing results. The first year is expensive, after that, you will know what works and will not work where you live. If you are going to move next year then do not try to experiment and wait until you are more stable. This type of hobby is for people that are located in a stable environment, most likely a person of the very least that is renting for a few years in the same location. I decided to move here this year and sign a lease for the next year and now I am ready for the next year, I spent about $1200 in experimenting, Buying pots, Computerized cell phone app controlled irrigation systems, grow lights, special antifungal sprays because of my area, long above-ground 2 x cedar 70-inch box planters with 7-inch wheels so when I do move I can wheel them onto a moving truck, 20 large bags times $13 a piece of miracle grow soil, 10 bags of garden soil for my berry bushes and pomegranate trees, fig-trees, Then comes the upgrades to the five-foot fence in lifting up the potted garden from the ground to the air so the rabbits don't get to them. all this was spent on a 15 by 10-foot area and a 5 foot by 7-foot area out front and outback. I am renting a townhouse in military housing so you can imagine how bland it looked before and how colorful and flowery it looks now.

    I keep on getting some pest dig up my sprouts (and attacking my garlic greens). What can I do to save my garden... I fear for my carrots. Is mint plant the answer?

      No, you can't - best to start from new beet seeds :)

      I bought beets and didnt eat em
      So they started going bad- so i threw em in the ground... And they are growing$!

      Totally can and I love the flavor. It will stunt the sizing up of the root a bit though

    I totally leave an inch of stem and cut the top beet and plop it back in the ground to grow again. I do that to radishes and carrots too

      I'm assuming you have to leave it in the ground and let it flower, maybe similar to carrots. Watch a video on carrots.

      Just found a video by Midwest Gardener. It has to winter and then you harvest next summer when it flowers. The flowers start to get dry before you dig it up. Hope this helps, I'm growing beets this year for the first time.

    I’ve been checking on my beetroots over the last few weeks, the actual beetroot is quite hard - is that normal? They’re soft when I buy them in the supermarket 🤔

      Beetroots in the store often get dehydrated and that's why they're soft. Straight fresh from the garden, yes they are supposed to be hard. They'll need peeled before eating raw or cooking.

    Sayr from Oklahoma, I actually just seeded these same beets in the garden. I also mixed the seed with Golden Beets. Did you harvest your beets too early? They look small. Is that the normal size for these beets to harvest? #artisanheirloomfoods

      I pulled one a bit early, but only because a random rain spell rotted out the top of it and I needed it out to reseed. I will say that these are a bit smaller than most beets I'm used to though, getting only about 2 inches across

      I've noticed many gardeners plant in rows or single veg. groups. Have you ever planted in companion groups before? I started so far 4 large 8x8 beds that are planted in companion groups. Beets, swiss chard and spring onions; Beets, kohlrabi, and spring onions; parsley, coriander,and basil; and corn and beans. Some channels have videos of how successful they are planting this way, but I've never done this until this year. I also don't plant in rows, but instead free hand broadcast the seed. I try to mimic nature this year in my technique. Have you tried this before? #artisanheirloomfoods

    I replanted a beet after the greens died, the greens came back to life. I'm going to let them die and regrow again. I'm a take most of the green, all the part with leaves.

    You don't need a shovel to pry them out of the ground when they are ready for harvest. You can just pull them out by the stem. You pulled those out way too soon. There are many better ways of storing beets than in a bag in the fridge.
