I like it, it's kind of an ethnological type of cooking show. I find it way more interesting than studio made cooking shows starring TV trained hosts. The food looks also very good ! I think you are a talented documentary filmmaker!

Pre-cooking the onions is a crucial step we don't just automatically know, so it would have been nice to see it in this video. And no, it isn't just throwing them in a pan over heat. That finish doesn't just make itself. I would have also liked to have seen what type and sizes of onions she started with, and how she prepped them for cooking, and no, it isn't just "peeling" them.
The spices add sweetness to otherwise what could be game tasting meat or gamey. Vinegar added to meat tenderizes and or lemon often turning meat whiteish. In the USA pork and fowl is so low in fat, that it is advised to brine these meats in salt and sugar for not longer than an hour. Do not use any salt after that and the poultry will not be salty nor will pork but will be tender. Turkey too. Try watching America's Test Kitchen on You Tube it is wonderful explaining the science practical part of cooking the chemistry. Baking soda for instance a very small amount sprinkled on brocholi will help bring out the flavor and get rid of the sulphuric taste also you can add a pinch to chopped pork that is mixed in with chopped red meat for meatloaf which will tenderize your pork. Our pork in the USA is tough not like years ago full of flavor and tender so Americas Test Kitchen advises these tricks. Nice videos.
