At that rate, you will finish each book in a reasonable time frame and your kid can sort-of age with the characters.

Jujutsu Kaisen is not good actually, I couldn't find a conclusion after finishing that anime
I think vinland saga & fullmetal brotherhood would fit more, demon sayer and jjk is tooo shonen for them
