You love cabbage so much, I wanted to give you one of my favorites. Makes a great summer dinner or bring along for a potluck! Asian Cabbage Salad 1 medium head of cabbage, finely chopped or shredded 4 green onions, sliced 4 Tb slivered almonds, toasted 4 Tb sesame seeds, toasted 3 pkg Raman noodles, uncooked and crushed 2 cooked chicken breasts, shredded Mix all together, adding chicken last. Add dressing and serve. Dressing: 4 Tb sugar 2 Tb sesame oil 1 C. minus 2 Tb safflower or peanut oil 6 Tb seasoned rice vinegar 3 Tb lemon juice (soy sauce, optional to taste)

What an interesting use of cabbage! I think every culture honors that lovely vegetable. My own Waldensian forebears (early leaders of the Reformation; native to what is now Italy-the Cottian Alps near the French border), utilized cabbage as a staple food source, and each family had their own version of “Les Callietes,” basically cabbage rolls. Hummmm… that might be an interesting presentation . . . The humble cabbage roll from various cultures.

I was thinking that you could make layered stacks with the small tortillas with the same ingredients, but would probably have to bake in some kind of round baking dish. That’s a really inventive filling - I’ve never seen anyone put cabbage inside an enchilada but now I’m curious to try it myself. I stuff my tortillas with a combo of taco seasoned beef, beans, cheese, salsa and rice. I lay them on enchilada sauce and drizzle more over them then sprinkle with more cheese just like you do . I don’t thin out my refried beans as I find that they thin out quite a bit in the heat of the oven when they bake. Sour cream is a must to serve on top . Deeelicious. Love the colors in your shirt and the pretty drive you take us on to the berry farm. I plant zinnias in with my zucchini, summer squash and cucumber hanging baskets as a companion plant to keep pests away . They do a great job of it . Your videos are a mini vacation for many of us. A hearty thank you for the efforts you put into them . 💗💗

Growing up in So Cal, Mexican food was often something my Mom made. Economical too as she wanted to be a stay-at-home Mom for several years. She always included sliced olives and scallions in and atop her enchiladas. Funny I wasn’t introduced to cilantro until I was almost 40!
Kevin I know you have steam radiators and no duct work for central air BUT SIR all of our friends with radiators are installing split unit central air. No ductwork required. Talk to a heating air conditioning company. Friends in NYC were surprised that there are huge rebates & programs offering cash back and zero interest programs. When you mentioned going into an air conditioned room to eat I thought maybe I will bring you up to date on the latest

Eating cabbage slaw with sunflower seeds, apples, and slaw dressing as I watch this. Looove cabbage! It lasts such a long time in the fridge - and I prefer it to lettuces. Works in all sorts of dishes.

Kevin. What an interesting idea, cabbage enchiladas. so, just a comment on these enchiladas, I would add the sauce for the liquid in the beans instead of water. . Another thing a Mexican friend taught me, she said you always should dredge the skins through the sauce before you fill them. It's a little messy but it really keeps them from drying out while baking and gives them a softer texture. I just bought a counter toaster oven that does 7 different things. I love it, no more hot kitchen from using my big oven. I grew zinnia's from seed this year and they are just pushing there blossoms. You will have a lovely kitchen garden adding them. 🏵

AND I have some poblano peppers, low carb tortillas, cheese and pinto beans. I'll probably make this tonight for supper. Those enchiladas will probably be good. the only thing that seems too far north of the border is using flour based tortillas. Here along the boarder in Arizona and California we try to keep them authentic with corn tortillas. They just have so much more flavor and texture. Try it some time.

Those enchiladas will probably be good. the only thing that seems too far north of the border is using flour based tortillas. Here along the boarder in Arizona and California we try to keep them authentic with corn tortillas. They just have so much more flavor and texture. Try it some time.
I find your videos very calming. Watching you cook and garden is so enjoyabe and inspiring. I am going to purchase zinnias tomorrow..I have not planted them for several years, but you have made me rethink that decision🌼
