The statement on butter is the most fascinating aspects of life.

This movie (which I took my parents and grandparents to see when it came out) and this scene in particullar are the reasons I eat WHILE I watch the movie. Julie and Julia is my FAV movie of Meryl Streep and Amy Adams.

This is one of my favorite "Julie" moments in the entire movie. This and the lobster scene! This movie taught me how to make poached eggs (YUM!) and then I watched The French Chef; and learned how to make omelet's.... so much buttery goodness...I want to make the boeuf bourguignon (spelling??) Don't ask me how to pronounce it lol. :D

Julia was always insistent that butter was a flavoring and larding agent, not a food in and of itself. Moderation in the final product and eating is key. French servings a very small, meals for the most part are eaten communally and seated (eating alone is considered weird) and most people walk during the day. Evening meals are served late, followed a stroll through town in warmer weather or dancing in the cities. In addition, wine helps keep cholesterol from forming placque in the arteries. Completely different from the USA where people run home to stuff their feelings with food after sitting at a desk all day.

Biologically, fats are needed to transport vitamins and to form insulation around nerve fibers in the brain. If you ever meet someone who has been on an ultra low fat diet for an expended period, they often have problems concentrating and have near scurvy like conditions from vitamin deficiency.

Sounds charming but preprepared dishes have become thé norm and more French have become fat. It is disturbing.

A recipe I haven't seen in this movie that uses a lot butter is French Fricasse...
You brown chicken in butter and after that make a broth wiith onions mushrooms garlic and chicken broth and let the chicken stew in it... after that you had cream...
    It's literally bliss

The butter doesnt make you fat. The bread does. Look at the channel, BUTTER MAKES YOUR PANTS FALL OFF. Butter is the wrongly accused here. It is very good for you, certainly better than margarine.

That is not true. Butter does not raise your low density lipoprotien level. It does not trigger the raise of your triglyceride level. This is a lie that Ancel Keyes told 50 years ago and people still believe it. The french use only butter and have the best heart health on earth.
