    This video is very good and educative, I did the similar method when dialing in my new coffee. When i got my taste satisfy and i am able to extract 36g @ 20~30sec, i will pull another shot again and program this setting on my Barista Express.

    Also, get a pad for your scale the plastic tray is meant for putting stuff in it that will slide around and fall off. Get a scale pad that will allow you to lay full length of portafilter.

    hi. I find that the 1:2 ratio is generally less bitter regardless of the coffee i use.

    *******important grinder tip..... keep a small flat plate/ saucer under the grinder when grinding to catch excess coffee grounds !

    35.67g in 19 seconds is pretty doggone good Aju. It is very difficult to time shut off to hit exactly 36 grams but you did good. By my calculation including the pre-infusion you were around 25-27 seconds. 👍👍 job. Still, you need to purge your grinder between grind changes and especially when changing beans.

    I do a ristretto. 18g in, 22g out in 28 seconds. Such a beautiful and aromatic shot.

      @@AjusCafe Mind you. I find that ristretto usually under-extract so I would recommend using a medium to dark roast for this brew recipe. 28 seconds pump on equates to roughly 21-22 seconds first drip on the Barista Express. Have you ever tried a ristretto? What do you think?

      The number sounds like a perfect Ristretto. I never tried a perfect one, as I feel it's too strong for me. But now I feel like to try this out today.

    1. Usually you are using double basket and not a single basket when you are grinding 18gr. Single you are using with 9 grams.
    2 When grinding 18gram use the double grinding option use the button to change it.
    3. To use accurate amount you should use the program mode. U enter one press on the double shot and when it arrive to 32 gram on the scale press again on the diouble shot button and stop it the after brewing drops will get you to 36.
    4. According to the time you got you change the grinding size if it less than 20sec go to more coarser in the grinder if it is more than 30sec go to finer grinding.
    5. Strange that you use 4 in the grinder scale the beans should be very fine maybe it is on 14.

      If you meant the dose amount is at single shot is because i like to stop it half way and tap to settle the beans in Portafilter, then dose the next half. That makes it 18g in a double basket. It is also mainly to avoid spilling of Grinds.
      Yes you can do Program mode as well. I have another video in my channel on Program mode.
      Grind side depends on the beans.

    Excellent and very informative. I’m finding that if I stop infusion close to 1:2 ratio, my infusion time is only 13-15 seconds. IF I try. And bring a finer coffee, then my pressure gets too high. Any suggestions?

      This can vary depending on the beans. How is the taste of espresso compared to both cases you described? I'd say 15 sec Extraction sounds ok for 1:2 ratio.

    I have found some of your ‘you tubes’ very useful as a new owner of the Breville Barista Express.
    I am enjoying new fresh coffees from my local barista in Melbourne, Micah coffee brewers.
    A question- do you ever dial in with a single shot basket and if so what would the differences be? Are you supposed to get the same yield and time of extraction as a double shot etc?

      Its difficult to get a good single shot Extraction. But you could keep these tips in mind. I always divide 18g by 2 and add 0.5 or 1 g more. i.e. 9.5 or 10g of beans for single shot. Extraction time should be 10-15 seconds and 1-1.5 Oz yield

    Hi Aju I attended the online training (excellent) and interestingly the barista recommended 19g of coffee (for the barista pro which has 54mm portafilter) since which I've been trying this (instead of the usual 18g) and it seems to work. Also the usual advice is 1:2 (coffee in/coffee out) but the default on the machine is closer to 1:3 (I get around 60g out using the default setting). It seems to produce an excellent result -what do others find?

      Not necessarily. Grinding finer might choke the shut.. but equally you'll fit more coffee in the portafilter.. so its a question of trial and error really

    Is there any way to dial in 1:2 ratio automatically?
    What is the recommended time to program to achieve it?

      Yes you can use Program Mode. You need to dial in and then see the time required for 1:2 ratio and set it. There are 2 videos in my channel to dial in by time and dial in by volume. Either works. But note that if u change beans u need to dial in and Program again.

    Hello, I have a 875 device and unfortunately I have a big problem and the problem I have is that I set the internal mill settings to 1 and the external mill settings to 1 as well but I still can't do proper extraction. I mean the extraction that should be done with 18 grams of coffee and 36 grams of extract between 20 and 30 seconds is less than 20 seconds for me and I have to make the mill finer but there is no possibility of getting smaller and I even tried several models of coffee and it still didn't work and even my friend's device that is like me and we bought together also has the same problem

      2 suggestions. If you want 1:2 ratio, stop extraction manually at 36g. Don't rely on Auto extraction of the machine.
      Second suggestion is to use freshly Roasted beans. When was the beans you used Roasted?

    Any, I made a 1:2 ratio (weight) this morning and my volume of shot was only about 1.3 oz instead of 2 oz. is this okay? You have a new subscriber my friend!

      1:2 ratio is supposed to give you lesser than 2 Oz. I got 1.4 or 1.5oz in that video i guess, as its half of 3 Oz glass

    Just a curious question… why did you program the 18g shot for the single shot? After watching many videos, I was led to believe that weight measurement was for a double shot. Shouldn’t one use the double shot button for the programming process.

Why didn't you use the double shot extraction button? I'm confused about this too. Maybe it doesn't matter since you are programming/measuring the shot until you push the button again to end the shot?

      Yes that's the brand. Grind setting was at 4.

      I've tried with Lavazza Crema e Gusto, Grind setting 2, 18mg beans and nothing :( .. the pressure was around 7-8 o'clock :( Any idea why ?

    Why is it always on “single” when you use 18 grams of coffee, is that not a double shots worth ?

      This was taken before I bought dosing cup. I do 2 single dose in order to avoid spill. In this case i can tap the Portafilter after 1 dose so that Grinds settle, before i dose 2nd half.

    I have gone through 5 kg of beans and cannot stop sourness with medium roast beans and even dark Lavazza,, so frustrating using sette 270Wi so weight is constant

      Sour taste is due to quick flow or old stale beans or not enough quantity or channeling etc. I'd recommend you to dial in with freshly Roasted beans a week old to start with. 18g in and get 36-45g output. If you get more in default settings, then set your Grinder finer. If you have a WDT, use that or make sure Grinds are distributed well. If you have Bottomless Portafilter, use that to check for channeling. Heavy channeling can make your espresso bitter.

      @@AjusCafe Thank you, this morning surprisingly I had an almost successful shot that I was able to drink with my pancakes of Lavazza Gran Riserva that I still need to get a liitle finer. I set the temp to the default position and 16 gm in 34 out in about 33 seconds .. I do use a bottomless and WDT after the sette 270wi..

    You're measuring 18g which is a double shot dosage but then only brewing a single shot? Am I misunderstanding?

      Yes you are misunderstanding. He is brewing base on ratio, weight in versus weight out. NOT volume. Double and single refers to volume and has no direct -relationship- correlation to -volume- weight. Please do search for James Hoffman video "explaining ratio".

      @@gregmunro90 oops mistyped. Meant to say relationship to "weight". The terms single and double traditionally refer to ounces or milliliters in liquid measure. When pulling ratio shot you are measuring weight of beans, aka dose, to yield out in weight. Grams to grams. You can do a search get on how ratios compare to traditional shot types such as a 1:1 to 1:2 ratio is considered a ristretto shot, 1:2 to 1:3 is considered a normal or normale, etc, etc. Notice there is no mention of single, double, triple. In researching this coffee hobby I have found the coffee industry is full of contradictions and you will get as many different answers to a question as the # of people you ask, including so called experts. It is more an art than science although there is science involved. What I've also noticed is coffee experts always revert to "it depends on taste or some other non measurable factor" when they can't explain or don't agree with the science. It is all very subjective. Think about it, man has been making coffee long before the sophisticated machines came into being. Just like we somehow communicated before cell phones and before TH-cam and MySpace and Facebook and Instagram and Twitter.

      @@ggivensjr thanks for your explanation. I was under the impression for a single shot 1:2 espresso ratio you aim for 9g in 18g out and for a double shot, 18g in 36g out. Here the video inputs 18g and then presses the single shot button. That still doesn’t add up for me

      @@gregmunro90 Actually the buttons can be programmed to output any amount of liquid you want. In fact many espresso machines only have one button or a paddle and you have to stop the shot when get the desired output. I programmed my 1 shot button for a 18g 1:2 shot and my 2 button is programmed for when I use the 20g basket shot. Sometimes I go completely manual by holding shot button for 8 second pre-infusion then a 1:3 output.

    I have a new BBE and NO WAY i cant get 18Gr in the basket. best shots i have done are 17G. just no way the stock basket holds 18G

      It depends on the beans you use. Some beans grind more for 18g and others less. You need to dispense half way, tap gently and dispense remaining to avoid overspill. But 17g is a good number to use.

    Aju I've liked your mini series of dialing in. But I must take exception with fact you are not purging your grinder between grind settings. Have you ever put in say 20 grams into grinder ground until you don't hear beans then, take out upper adjustable burr and look into the grinder. You will see lots of ground beans and maybe even a whole bean or 2. The Breville BBE grinder and even the Breville Smart Grinder Pro are not meant to be single dose grinders. They rely on weight of beans to get a consistent grind weight.
    How is you explain only getting about 17g when you heard no beans than finally getting more than what the 18.8g you put in? It is because the grinder is NOT zero rentintion.

      I haven't had an experience where I got more Grinds that the weight of the beans i put. Usually i put only the beans (18g) i need into the hopper. And I change the Grind size when the hopper is empty. Not when the beans are in. I agree BBE is not accurate.

      @@AjusCafe Remove the adjustable burr then unscrew acorn nut to remove the inner burr. Be careful there are 2 washers under the nut. When you lift out the inner burr you will see lots of coffee on the shelf in the grind chamber. With a pair of needle nose pliers or magnet you can remove the wheel that pushes the grinds into chute then you will see ground coffee that hasn't been pushed out. You can find reviews on TH-cam that document retention factor of Breville's grinders.

    Is your scale calibrated? Get a 500 gram weight to test your scale. If its not accurate get a scale that can be calibrated.
