    I think the purpose of pre-infusion is to minimize channeling. Less pressure allows the grounds to moisten uniformly before assaulting them with high pressure. I always use manual mode and watch for the flow to begin before taking my finger off the button triggering full pressure. I continue to watch for the espresso cup to become full before pressing the button again to complete extraction. Enjoying your channel !

    Thanks. This was helpful in combination with your pre-infusion only video. This morning I tried simply closing my steam valve after 6 seconds of preinfusion to start the extraction and got better results than stopping and restarting the pump. Too bad the Sylvia doesn't have automatic preinfusion, but this works fine! Always learning new things. Thanks again!

    Dear Aju, I think you have solved my problem with single shot basket! I was struggling to get decent shot from single basket, I think part of the problem was that during the pre-infusion, with single basket, liquid started flowing very early and continued during whole pre-infusion and as a result I think 50% or more brewing was done during pre-infusion - resulting in bad espresso. Now, I cut the pre-infusion early adter 2-3 seconds and the espresso is fuller and tasting more closely as it should. Thanks again, the video was very helpful. All the best wishes from Prague!

    Very helpful to know the magic number of 8 to 12 seconds particularly since you got this straight from Breville support. Also the explanation that things are "slower" on BBE than on a commercial grade machine makes sense to me.

      No. Pre-Infusion cannot be programed. It is done manually as desired

    This is really good information... i have a question. The pre infusion on my machine is less than 6sec. What could be the reason for it?

      1. Are you using the same model BES870XL?
      2. Did you just run water test with Pressurized dual-walled basket without grinds?
      3. Are you testing with Double Cup basket and button? Single cup size time may differ.

      Pre-Infusion time cannot be programmed in this machine. But the Extraction time can be programmed and it remembers.

    Over time you will find auto pre-infusion time is pretty consistent between 10 and 11 seconds.

    Hey I have a question here, alot of coffee youtubers including James Hoffman have mentioned that these entry level home espresso machines have pressure that is too high for espresso more than 9 bars. Recently alot of people have been recommending the keep your finger on the singe or double shot button throughout the entire shot until you get your desired output of 36g or whatever. I've been noticing much better flow in the shot from doing this the past few months. Otherwise I always experience really messy shots regardless how dailed in my grind size is (I use 1zpresso hand grinder for better results)
    Wanted to know if you have tried this and if u agree that the barista express full pressure is wayyyy too much pressure for espresso

      What you explained is preinfusion. To make espresso only in preinfusion mode won't bring out all flavors of the beans. I've explained it here th-cam.com/video/Q-9EcESWigY/w-d-xo.html
      15 bar pressure maybe a bit too much. 9 would be ideal. Im pretty sure new BBE has 9 bar pressure written on the box.

      Hey I’ve just watched minute 9-13 of your video and I can see what the issue is your pressure gauge does not move at all in FULL pre infusion mode. When I do it on my machine I ensure I’m grinding very fine to ensure that the pressure gauge is between at 10-12 o’clock. Therefore it is possible to hit the accurate pressure in full pre infusion mode if u grind fine enough, this way you will actually extract even more flavor and avoid +9 bars of pressure

      @@AjusCafe yes sir; please try it and let me know. My grind setting on the barista express is 2 (internal grinder setting) and 2-5 (external grinder setting) this will differ of course for the beans you use but a good starting point. I also use a IMS 22g basket

    How tight should the portafilter be tightened in the machine?

      As much as it could go right. Nee machines have new gasket winch could prevent you from going all the way to the right. But after warning up the machine, the gasket may soften and allow you.

      This was to avoid over spill of grids. So i did half, then tap gently to settle first half and then dispense 2nd half. Now i use a dosing cup and dispense in a go

    Can i ask , if i making a 12 g in espresso, what should i adjust in my brevilee express machine ? Because i use the default one cup setting, the espresso tatse bad.. too bitter

      To fix bitter espresso
      1. Make sure your beans are freshly Roasted
      2. It's bitter because the flow is less and its chocking. That means you need to adjust the Grinder. But i feel 12g is too much for single cup size. Reduce to 10g and see.
      3. If its still chocking flow then adjust the Grinder to be Coarser.
      4. Make sure the Extraction finishes in 10-15 seconds in single shot

    should the machine be pouring coffee during the pre-infusion?

      If you grinds are Coarser the yes few drops are visible. If the Grinds are finer, you won't see any drops. Ideally you should not see any during preinfusion, but your puck should be fully wet. Then as it goes to full pressure, you should immediately see the 1st drop.

    This is why in your dialing in video I said you should count pre-infusion in total brew time because extraction starts moment water contacts coffee just like with pourover and French Press.

    during pre infusion the meter reaches the espresso range. anyone know why this might be happening?

      If it reaches pressure range or high pressure, that's not going into preinfusion mode. i.e. in auto Extraction mode and within 5 seconds. Have you tried this Manual Mode Preinfusion?

      @@dosss_ that sounds strange. If you press double cup button without Portafilter and listen, the first few seconds it will sound quite and then the loud sound of pump kicks in. Are you hearing this variation of sound without placing the Portafilter? If no, then something wrong with the control board.

      ​@@AjusCafe ahh yep i can hear it go louder without portafilter, so it's definitely working.
      I actually just watched one of your other videos (th-cam.com/video/ifI4AajrDOQ/w-d-xo.html). The shot at this timestamp looks exactly the same as to how mine turns out .
      I'm also at the finest grind setting 1, so maybe I also need to reduce the Burr size!!
      I've ran out of coffee beans testing it though, so I'll quickly go get some and let you know XD
