Simple, Old Fashioned, 14 Day Pickle Recipe | Farm to Table Food Preservation | July 2024

  • Today we are making these old fashioned sweet pickles that folks around here have been making for generations! If you've never had 14 day icicle pickles, the flavor is like no other, definitely give them a try! Feel free to quarter or half the recipe below!

    14 day Icicle Sweet Pickle Recipe
    -2 gallons sliced cucumbers
    -1 gallon water
    -2 cups of pickling salt (canning or plain salt)
    -1 Tbsp Alum
    -12 cups white vinegar
    -14 cups sugar
    -2 Tbsp pickling spice
    Day 1-7
    Place your sliced cucumbers (chips or spears) into ceramic crock, glass jars, or ceramic mixing bowls (do not use metal). In a large pot heat 1 gallon of water, add 2 cups pickling salt. Bring to a boil and put over cucumbers until they are completely covered. Let cucumbers sit untouched for 5-7 days (7days ideal).
    Day 8
    Drain the cucumbers. cover with clean boiling water, let sit 24 hours
    Day 9
    Drain the cucumbers. Add 1 Tbsp Alum to 1 gallon of water, stir to dissolve, bring to a boil. Pour the alum water over cucumbers. Let them sit for another 24 hours.
    Day 10
    Drain the alum water. Rinse cucumbers well. Prepare pickling syrup. Combine vinegar, sugar, and pickling spice. Bring to a boil. Pour over cucumbers.
    Day 11
    Drain syrup into a pot, bring to a boil pour back over cucumbers.
    Day 12
    Drain syrup into a pot, bring to a boil pour back over cucumbers.
    Day 13
    Drain syrup into a pot, bring to a boil pour back over cucumbers.
    Day 14
    Prepare and sterilize jars, lids and rings. Drain syrup into a pot. Add pickles to jars, feel free to try them at this point! Bring syrup to a rolling boil, ladle syrup over pickles. Apply lid and ring. If you don't have enough syrup to cover all the pickles, just place those jars in the fridge for snacking now!
    It is recommended to water bath these pickles for 20 minutes. Enjoy!
    Remember the longer they sit the better they are!

They are just as down to earth in person as they are in the videos and they never let us leave from a visit without giving us something to take home and try. We treasure their friendship.

      I​@@johnnysharpe3812 I found their channel a few months ago and I'm so glad I did I can't do a garden or anything really but I enjoy watching them I still dream of being outside with my flowers and everything I miss being able to do it. but watching them give me so much joy because you can just tell they are the real thing not just on here to make money . I love that you have become real friends with them to be able to eat some of her great food and O boy I can taste these pickles never had these before. To see their animals especially her horses they are sure blessed and they know it they are always thankful for everything. 😊

    This is the way my Grandmother and Mother made pickles, so of course I thought every other homemade sweet pickle was the same. Imagine my surprise when I found that that was a huge misinterpretation of the truth !😳 It is a big commitment but worth every day you spend on them.
    2015 Mom and I were in a car accident . Mom didn’t make it past that day and I was in 4 different hospitals for many surgeries that first year. When things settled down and I was able to look at life again with joy and thankfulness my 2 Sisters and 1 Brother or the golden child as we referred to him told me of the “war” that went on over Momma’s sweet pickles that were put up the summer before. It made my heart sing because I know that would have tickled Mom’s Louisiana heart. Thank you.

    This is the second year I’ve made your 14 day pickle recipe. They are absolutely wonderful….I’m making twice the amount I made last year so I don’t run out. Instead of making sweet pickle relish, I just take a pint of your pickles and pulse in the food processor. It is THE BEST relish ever! I love you and your sweet family. 😊💛…hugs to your precious babies!!!

    I broke my Crock. Now I use a food grade white plastic bucket the heat doesn't hurt it.

    Whenever I open a bag ,box or can, I make a note and replace it. I keep extras of everything we eat so I rarely run out of something. Since I don’t like going to the store very much, it works for me.

    My grandmother, mother and myself make these. My grandmother always called them 14 Day Churn Pickles. I guess because she made them in a crock butter churn. These make the best potato salad and tuna fish! Thank you for sharing your version of these delicious pickles!

    I love those kids, they are awesome! Loved watching you make your pickles. We always made bread and butter pickles "cause that is my Mom's favorite. They always looked so pretty with all the mustard seeds and celery seeds and everything else. Thank you Megan for showing how those pickles are done. That is some process.     Bless you, you use your hands. Drives me crazy that everyone on TH-cam/ticktoc/instagram wear gloves or uses an unused separate spoon to taste for seasoning. This is your family people. Who lives like that in real life? We all make sure our house, supplies, utensils and hands are clean. They should all get real!

    My 14 day sweet pickle recipe calls for starting out (after the brine part) with a weak sugar syrup and adding more sugar to the boiling syrup each day My recipe is from the 1960's or before. I've been making them since then and the recipe was given to me. I think mine are really good, but I make my own pickling spice because there's a thing or two in the boughten kind I don't care for. I also make mine with sliced sideways smallish cukes, and when I do them I clean the vines of really tiny ones, and try to make two half-pints of the tiniest, one for Thanksgiving dinner and one for Christmas dinner. I used to make icicle pickles, too, and I thought they were called that because of the shape. I've made them in dill, bread and butter and sweet kinds. My family liked the dill icicle pickles best. I made so many different pickles trying to stretch the variety of things on the table with not a lot of effort on my part.

    Megan I have single handedly made the worst pickles myself. Reminded me of the kerosene pickles Aunt Bee made on Andy Griffith. I'm sure yours are some of the best out there.

    If you used a lid to a five gallon bucket, trimmed down to fit inside the 4 gallon crock and drill some 1/4 inch holes with a 1/2 inch hole in the center. The half inch hole is put your finger in to remove it. It would make draining them much easier.

    Those are the best sweet pickles! I've never made them, but my mom used to and they're an excellent pickle! I like how crunchy they are too. Mom would finely chop them up and add to chicken salad or potato salad. So delicious!

    Mom makes these sliced like pickle chips but does this in 3 days. They are awesome!!! Sweeet with that bite but after that first one ya can’t stop eating em! She uses the juice for deviled eggs and tater salad 😋

    My mother made ice cycle pickles like that in her grandmother’s crock that was handed down from the 1800s. She had two stones that fit the crock on top. One was used for kraut that she made in the same crock. I guess the other one was used for pickles

    I make these too and we love them! My recipe is slightly different than yours but pretty much the same and you are right they just get better with age lol. My cucumbers did terrible this year so I decided to try making my 14 day pickles with watermelon rind and wow so so good!

    I make crunchy pickles without all that fuss and bother by using pickling lime. Twenty four hrs in the lime water then twenty four in ice water, fill the jars with the cukes, vinegar, spices and 10 mins in the water bath canner and they stay crisp for yrs. I opened a jar of sweet pickles that was 10 yrs old and they were still crunchy.

    We love 14-day pickles. We can those and lime pickles every year, and no matter how many I can we always run out. It's like the more of them we have the more we eat..lol. Anyone who has not tried them really should. They are wonderful. Hope ya'll are getting some of this wonderful rain!

    Make up a batch of green tomato pickles by your recipe. Even better than cucumbers. Give it a try.

    I have made 9 day pickles for many years but my recipe says to drain brine and bring to a boil and pour back over pickles after 3 days and again after 6 days. Then I do the alum just like you did and then the brine, for 3 days. The recipe I use calls for cinnamon sticks instead of pickling spice and green food coloring, but the green coloring is optional. They make a really good pickle too. Thanks for sharing your method. Think I'll give it a try.

    My mom made the 14 day sweet pickles and they were so good it was hard to stop eating them sometimes because they were so good

    I use pickling lime for crisp pickles… pretty much same process you re using in video with the alum-I’ve never seen anyone else using pickling lime🤷🏻‍♀️. Is it a bad No No that I’m not aware of? I love that there’s so many ways to pickle!
