Excellent Iranian food. Better than Indian restaurants. Even Pakistani Kabob and Pakistani Muslim Biryani. The best in the world. I use Zebra, rice. Best Basmati, rice in the world. Just go to Traders Joe. They have all Indian recopies Organic.
@@aqsascuisine no it is not, Persian koobideh is the simple and easy mix of 60% lamb and 40% beef with 25% to 30% fat 200 gram of onion with 80% of it's juice out weigh after you get the juice out salt tea spoon pepper 1/2 tea spoon that's it no garlic ,turmeric, egg or baking soda or anything else
Okay first of all there should be no garlic and no turmeric. Do not blend the onion. Onion has to be grated. The biggest mistake is frying the kabab. The meat will become hard and chewy. This kabab meant to be cooked only on barbecue. High flame to keep the juice inside. If you you think the meat won't stick properly on the skewer, then you add one egg. Or with practice you will understand the right amount of onion or the perfect cut of meat. (ideally 50%beef and 50%lamb)beef from shoulder and lamb from ribs
@@xhcq2464 سلام. روی کباب رو با برس کره آب شده بزنید. اگر دوست داشتید میتونید کره آب شده با زعفران بزنید. انتخاب گوشت خیلی مهمه. نصف گوشت گوسفندی و نصف گوشت گوساله. گوشت گوسفند قلوه گاه و گوشت گوساله سر شانه. تفاله پیاز هم حدود ۲۰۰ تا ۲۵۰ گرم برای یک کیلو گوشت. روی یوتوب ویدئو های خیلی خوبی هست. ادویه فقط نمک و فلفل سیاه و کمی فلفل قرمز. اگر پودر پاپریکا دودی پیدا کردید حتما اضافه کنید.
@@xhcq2464 چند بار درست کنید از رنگ و شکل کباب میفهمید کامل پخته یا نه. آتیش باید نه خیلی خیلی داغ باشه و نه خیلی کم. بعد از اینکه اشک کباب در اومد فکر میکنم سه چهار دقیقه بعد کباب پخته باشه و هنوز داخلش آبدار باشه
