    My first experience trying these was at a Brewery/restaurant called the Weeping Radish, in North Carolina. The man that runs the brewery, Uli, has a bunch of real German foods on his menu. The potato pancakes are a must, but I didn't know you ate them with either the applesauce or the sour cream sauce! I've been doing both for years, and they are awesome! I am definitely going to make these. Thank you!

    Great job looks delicious! In my German family growing up instead of Apple sauce we used good grape jelly...the combination of sweet and savoury is awesome.

    For squeezing excess water from raw shredded vegetables--if you have one, this is when a potato ricer comes in handy. The best nutmeg is grated only as needed, it's quite strong though. My mother also grew chives and Italian flat leaf parsley in the garden.

    Oooh. My husband is German descent and my family is mostly Polish. I grew up eating latkes or potato pancakes. I’m going to try this variation with my boys. I will also likely add zucchini from the garden because it pairs well with potato pancakes and can easily go sweet or savory. Just subscribed! I love exploring cultures through food. Thanks for your videos. 💙

    Really like your way of presentation, simplicity and humour. I would definitely prefer the yoghurt dip but I can also imagine how sweet and savoury can go well together. In India we do have sweet dips with spicy savoury fritters. Its all about balance.

    I tell my non german friends that potato, onion and apples are how germans survived. Throw in some wurst and you can live forever. I have always loved applesauce that is chunky along with my potato pancakes my son would have is with eggs and friends love sour cream. Everyone is happy, I even taught my son's peruana wife how to make them. Flying when a metal grater was fun.

    Another delicious variation of potato pancakes is as follows. Hot potato pancakes, some wild salmon on top, then some crème fraîche and cranberries. So delicious!

    I just had to comment, my Oma ( and Mother) made this for me when I was a child. It’s delicious! Oma also fried a pork chop with it. So very good 🌺

    So many variations of these potato dishes in Germany. I like the one where you grate the potato very fine, spoon off the water, add some: flour, egg, salt, some grated onion, marjoram and parsley. Then fry the coarse lumpy batter in olive oil in a cast iron skillet. Apple sauce, a flavored sour cream or the sauce you made are all good. These can be served for any meal of the day.
    Now cheese clothe or a white tea towel is what I use to let the water drip out of a raw potato puree. That potato water if it is cooked, can be used to make... as a basis for potato bread. The potato starch and the potato water gives a finer texture to the yeast dough for making any bread.

      @@DWFood Well the tip comes from mu German Grandmother's Cookbook, written about 1919 in Gothic Script. Back in those days people were taught to be self sufficient and not waste anything. I even have a way of using left over fats for making soaps and then using the soaps for cleaning. The wood ash was saved to make the lye, by running water through it and collecting the water to mix in a large cast iron pot with the left over fat. The name of the book is: Kochbuch der Haushaltungs und Kochschule des Baden Frauenvereins. Fünfte Auslage. Karlsrühe im Selbstverlag. Emma Wundt wrote 2 other editions, the 2nd and 3rd.

    Grated potatoes grated onion mix with flour and eggs and fry golden colour ,very tasty ,some people eats with salt,pepper,or sugar ,however you want
    Its call ( placki ziemniaczane)
    Its similar i guess
    Its like flat potatoes pancakes but smaller in size

    I made these potato pancakes for my elderly father. He was instantly transported back to his childhood: "THIS is how to make potato pancakes ! The edges should be crispy. Nowadays the restaurants grate the potatoes too finely."

    OK, since this dish is basically a bread and butter in Eastern Europe, I will share the recipie which is probably 3 or 4 generations old. And trust me, it works and it works well. First of all to get best results use red potatoes, not white or yellow ones. Red ones tend to keep their shape and form best. Tested through many years of cooking. The use very thin grater. I am not sure that it even exists outside Eastern Europe, but I found similar stuff in Sweden as well. It's even more thinner than that thin cutter we all have and use for cheese. So the recipie is simple - grade 3 or 4 big potatoes, do not rinse or strain them after, u need all the starch. Then add curd, minced or grayed onion, 1 whole egg and salt/pepper to taste. And that's it. Use only sunflower oil, preferably the one that still have the smell and taste. I has a lower smoke point but it is so worth to use it for aroma. Fry pancakes in that oil and serve with sourcream mixed with fill, salt and pepper. That's it. U can throw some smoked salmon on top if you are feeling fancy

    I prefer to use washed potatoes and leave the skin on for more potato flavor. I like that you used the potato starch version and not with eggs, also suitable for vegans then.

    Kartoffelpuffer and Reibekuchen are not the same thing. Reibekuchen is much closer to the Swiss Rösti, with a rather coarse texture, wheras Kartoffelpuffer are made with a smooth potato batter, just like pancakes.

      @sonas p Waxy potatoes are actually not that floury. They are high in moisture and quite low in starch. New potatoes for example are usually quite *waxy* with a nice "potato flavour". 😋🥔🥔🥔
