After dealing with actual spanish waiters you realize how unrealistics this was .. They are usually hot tempered and dont take shit from anyone, specially a guiri or foreigner. You dont even need to get physical, whenever they feel disrespected in the slightest they either ignore you, insult you or punch you in the face. But this kind of spineless behaviour is unheard of amongst them. I guess the actor was not even spanish, otherwise he would know of this cultural nuance.
No. Manuel was originally written as spanish by Cleese and Booth. During the initial casting Andrew Sachs wasn't sure he could pull off a convincing spanish accent and suggested to Cleese that he play Manuel as german - because being half german he could do that accent well.
