    Recipe for saffron rice cake (6-8 people serving size):
    For chicken preparation:
    2 chicken breasts
    1/4 tsp turmeric
    salt to the taste
    1 carrot chopped
    1/4 of one large onion for cooking the chicken with
    3/4 of one onion sliced
    1 tbsp. curry powder
    1/2 tbsp. cardamom
    1 tbsp. turmeric
    1 tbsp. cinnamon
    (you can skip any of above spices if you don't like it)
    let the chicken cook
    After cooking the chicken shred it, and then set it aside. then slice the remaining onion and sauté it until it becomes golden brown. Add the shredded chicken with spices and mix them well along with 1 cup of chicken broth that we got from cooking the chicken earlier. let the juice evaporate and then set aside.
    For rice cake:
    1 tsp. saffron thread (bloom your saffron thread by following the saffron water video)
    4 cups of half-cooked rice (long grain, basmati)
    4 eggs
    1 cup yogurt
    1 cup melted butter
    1 tbsp. rose water
    1/2 tsp cardamom
    whisk the wet ingredients together, add the spices and then add the rice. I added one cup of the remaining chicken broth to the rice batter as well.
    For the sour and crunchy part (interlayer):
    1 cup dried barberries washed and cleaned
    1 cup of slivered almonds
    follow the instruction on the video to get the best results.
    Rule of thumb: for each cup of rice you need 1/4 cup melted butter,1/4 cup yogurt, and one egg if you want to size the recipe down.

    Your videos are so good. I would recommend scripting your words before hand. I know most TH-camrs do that they write them down, rehearse and record w/o sounding scripted. Also Persian subtitles or even a Persian voice over that you publish in a separate channel would be awesome. Keep it up.

      Thanks for your feedback! I was thinking about Persian subtitles as well. I need to add Farsi keyboard to my laptop :) . I will try to improve my sound recording quality :)

    The cross section of the final product looks very yummy ;) I wonder what kind of flavor the "barberries" introduce

      good question! barberry has a tart flavor and when you add sweater or sugar you change the profile to sweet and sour at the same time. it is so good when you add it to the rice.
      also for your information this would be good to know:
      Barberry, is a shrub that grows tart, red berries. Barberries are good source of fiber, vitamin C, and iron. In addition, barberries contain zinc, manganese, and copper, all of which are trace minerals that play significant roles in immunity and disease prevention. Most barberries you find in stores are imported from Iran and unlike cranberries they are sold with no added sugar. In Persian cuisine the most popular dish is called zereshk polo (polow) - which means barberry rice. you can add barberries in rice, frittatas, stews, or even soups. I will show you in future how to incorporate barberries in Persian dishes.

    The chicken and spices remind me of pastilla/bastilla I've made. Is that a Persian dish or different?

      That one I believe is Moroccan if I’m not wrong. Persians also like to incorporate their dishes with spices especially with turmeric, cinnamon, and cardamom.

    can this be done in a vegetarian way, like no dead animal parts or dead fluids?

      Yes! You can make it vegetarian by adding mushroom and spinach or eggplant in the center. Also use vegetable broth☺️
      I can make a video vegetarian option as well. Let me know if you’re interested 😊

      @@Taatcooking many thanks. this is helpful. how about using wheat gluten/Seitan, or even pickled jack fruit? and of course anything vegetarian would have a lot of viewers and applause. just make sure you add the name "vegetarian" to the title so that it can be searched and found. cheers
