Persian Rice With Two Different Tahdigs ( برنج با ته دیگ)- easy method to prepare rice 🍚

  • Persians use a long grain rice that is difficult to find in the US, so we will substitute with long grain basmati rice and cook the rice in a non-stick pan for best results.
    In Iran, we cook rice or Chollow in two ways. One way is faster and does not require multiple steps. You can prepare it in half an hour without any rice cooker. We call this method Kateh.
    The second method gives you a better texture and it is usually cooked when you have guests coming over to show your respect for them. We call this method chollow dami.

    Serving size 2-4 people
    *The amount of water can be varied depending on the type of rice and here I am using 1.5 cups of water for each cup of rice.
    Long grain basmati rice 2 cups
    Butter (optional) 1 tbs.
    Salt
    water 3 cups
    oil 3-4 tbs.

    Water 6 cups
    Salt 3 tsp.
    Oil
    water for steaming the rice 1/4 cup
    for #Tahdig (optional):
    1 large Potato (based on the size of pan)
    1 tsp. Saffron
    2 ice cubes

      It’s my favorite version of Tahdig. Let me know how yours turns out. There are so many different variations of Tahdig. You can use flat bread, sweet potato, eggplant, or even lettuce! All are so yummy!

      Basmati is fortunately one of the healthier rices when it comes to arsenic content and has about 1/3 the amount of arsenic compared to brown rice.
