  • Pumpkin Mac & Cheese 2.0
    Ingredients
    About 1lb of pasta - 2 tbsp butter - 2 tbsp flour - 2 cups milk
    1 cup pumpkin - 4 oz cheddar cheese - 7 oz mozzarella cheese - ½ tsp salt
    ½ tsp cinnamon - ½ tsp nutmeg
    Equipment
    Pot to boil pasta - large frying pan - wooden spoon/spatula - colander
    Instructions:
    1) Wash your hands
    TO MAKE THE PASTA
    2) Bring a pot of salted water to a boil and carefully add in your pasta. Stir occasionally to make sure the pasta isn’t
    sticking to the pot, and cook for about 6-7 minutes or until the pasta is slightly undercooked
    a. we’re going to cook the pasta more later, so make sure not to cook it too much during this step
    3) When the pasta has been cooking for about 6-7 minutes, drain and set aside
    TO MAKE THE CHEESE SAUCE
    4) In your frying pan, melt the butter over medium to medium/low heat
    a. You don’t want the pan to get too hot during this step, so make sure to keep the heat fairly low
    5) Once your butter is melted pour in your flour and stir until all of the butter is absorbed by the flour. Continue
    cooking and stirring until the flour has started to brown slightly
    a. this will make sure that you get rid of the flour taste
    6) When your flour has started to brown, carefully add in the milk and stir constantly until the sauce starts to
    thicken up. This should take about 3 minutes
    a. when it’s done it should be thick enough to coat the back of your spoon/spatula
    7) Once your sauce has thickened, turn then heat to low and add in both of the cheeses and the spice mixture. Stir
    until all of the cheese is melted.
    8) When the cheese is melted, carefully pour your pasta into the sauce and mix well until everything is very well
    coated and has thickened up even more.
    a. This should take about 3-4 minutes
    9) When everything is well mixed, serve and enjoy!
