The Tucson Family Food Project

The Tucson Family Food Project is a nonprofit designed to not only feed the kids in our program, but also to teach them how to prepare food in their homes themselves. How do we do this? We provide a weekly meal kit for our participating students that is specifically designed to be cooked by them in their homes. Every meal kit comes with detailed instructions as well as a TH-cam video that they can watch along with to help them develop an important life skill that they can use and build upon throughout their lives.
Pepperoni Pizza
Pepperoni Pizza
Making the dough will take about 2 hours. Plan accordingly :)
Ingredients
- 2 cups all purpose flour - 10 oz pizza sauce - 10 oz mozzarella cheese
- pepperoni - 2 heaping tsp salt - 1 tbsp EVOO
- 1 heaping tsp active dry yeast (with small pinch sugar)
*You’ll also need to measure out 2 cups of flour from your bag
*You’ll also need to provide 1 ⅔ cup warm water from home
Equipment
- Baking sheet - 2 large bowls - 1 tbsp measurement - large spoon/ladle

Instructions
Wash your hands :)
1. Pour your yeast and sugar into a small bowl and add 1 tablespoon warm water - let sit for 25 minutes
2. In a large bowl all of the flour and the 1 ⅔ cup warm water and mix with your hands until combined - let sit for 25 mins
3. After 25 minutes, add the yeasty water paste to the dough and mix by hand for 2 minutes
4. Then, add the salt and mix by hand for another 2 minutes
Let sit for 5 minutes after this
5. Then, aggressively mix the dough by hand, kneading, folding anyway you can for another 3 minutes.
Dough should be somewhat tough at this point.
6. Pour a small amount of olive oil into a bowl and use your fingers to coat. Shape the dough into a ball and place in the oiled bowl.
7. After 30 mins, give the dough some folds and flip the dough over, forming into a ball by pulling the bottom tight.
Let the dough rest until it has doubled in size
Total time to let dough rise is about 90 minutes
8. After the dough has doubled in size, to an olive oil lined baking sheet
9. Stretch the dough and use your fingers to spread it out to the edges of the baking sheet. Add more oil to the top where needed
Dough should be airy and bubbly to some degree. If not, let it rise more with plastic wrap on top :)
10. Add sauce and toppings evenly on top,
Be careful not to put too much sauce and drown the dough
11. Bake at 450 degrees until edges are dark golden brown
Pizza de peperoni

- pepperoni - 2 cucharaditas colmadas de sal - 1 cucharada de AOVE
- 1 cucharadita colmada de levadura seca activa (con una pizca pequeña de azúcar)
*También necesitarás medir 2 tazas de harina de tu bolsa.
*También deberás proporcionar 1 ⅔ taza de agua tibia de casa.
Equipo
- Bandeja para hornear - 2 tazones grandes - 1 cucharada de medida - cuchara/cucharón grande
- tazón pequeño
Instrucciones
Lávese las manos :)
1. Vierta la levadura y el azúcar en un tazón pequeño y agregue 1 cucharada de agua tibia; déjelo reposar durante 25 minutos.
2. En un tazón grande, toda la harina y 1 ⅔ taza de agua tibia y mezcle con las manos hasta que se combinen; déjelo reposar durante 25 minutos.
3. Después de 25 minutos, agregue la pasta de agua con levadura a la masa y mezcle a mano durante 2 minutos.
4. Luego, agrega la sal y mezcla a mano por otros 2 minutos.
Déjelo reposar durante 5 minutos después de esto.
5. Luego, mezcle agresivamente la masa a mano, amasando y doblando como pueda durante otros 3 minutos.
En este punto la masa debería estar algo dura.
6. Vierta una pequeña cantidad de aceite de oliva en un bol y use los dedos para cubrir. Forma una bola con la masa y colócala en el bol engrasado.
7. Después de 30 minutos, pliegue la masa algunos pliegues y voltéela, formando una bola tirando de la parte inferior con fuerza.
Dejar reposar la masa hasta que haya doblado su tamaño.
El tiempo total para dejar crecer la masa es de unos 90 minutos.
8. Después de que la masa haya duplicado su tamaño, colóquela en una bandeja para hornear cubierta con aceite de oliva.
9. Estire la masa y use los dedos para extenderla hasta los bordes de la bandeja para hornear. Agregue más aceite en la parte superior donde sea necesario.
La masa debe quedar aireada y burbujeante hasta cierto punto. Si no, dejar que suba más con film transparente encima :)
10. Agregue la salsa y los aderezos de manera uniforme encima.
Ten cuidado de no poner demasiada salsa y ahogar la masa.
11. Hornee a 450 grados hasta que los bordes estén dorados oscuros.
