One of my favorite places to eat near my home is a Mongolian grill, where you fill your bowl with the veggies and noodles you want and hand it over--and they cook the food on a large concave circle of hot metal over flames, while you stand and watch. It's fascinating the same way this man is, the skill and concentration involved... thanks for sharing this, I loved watching!
HOLY SHIT. My dad brought me to this same exact stall saying this was legit amazing noodles which he ate when he was young. and it tasted DIVINE. That food court you went to has all sorts of old traditional food that is slowly vanishing from our fast developing city. You should try them out!

I think there are 3 or 4 dialects/languages of Chinese majorly spoken in Singapore. Teochew is one of them. Hokkein is the biggest, if I'm not mistaken. The older generations aren't speaking Mandarin Chinese. Tamil is the prominent Indian language. Then there's Malay... So if you go to ethnic cultural parts of Singapore, your best bet is to just know Singlish, heh. Then you can communicate with most anyone who does not speak standard English. Though "1 bowl" is likely universally understood. XP
In Singapore, if the queues at the stall is super duper long, you just KNOW that you HAVE to be in the queues (coz that is where the awesome food is at!).
minced meat noodles in Singapore is one of the best delicacies you must try if you ever come. it is also known as bar chor mee. bar chor = minced meat and mee = noodles.
was this street-cooking? i have HUGH respect for people who street-cooks, (if that's how you want to call it). most of the times, they KNOW what their doing by how diligently and meticulous they put dishes together, like the guy in the video, HE KNOWS HIS STUFF.
whoa this man is a noodle making ninja, the speed and precision are an art, couldn't see half the ingredients, in fact i think the only thing i really saw was the noodles, but man that dude got skills!! :D hope it tasted good or else... wow, that would be anticlimactic XD
