    My mother-in-law was Lebanese and so to remember her and keep all the food traditions alive. I make Middle Eastern food 4 Easter to celebrate the resurrection. She did this every Easter I so miss her! Tedious and time-consuming but on Easter after church it's so rewarding! I'm going to add this cookie to my repertoire thank you very much!

    Hahahah when she jumped after tasting - you can tell her inner child came out! I'm neither middle eastern nor lebanese but i love ma'amoul and if I ever have a family of my own I'd love to have this tradition of making these together cuz these are my favourite cookies since i lived in middle east and them during ramadan. I'm not muslim but the first ever Eid gift i received was when i lived in Qatar and my local bakery gave me a whole platter of assorted ma'amoul and said it's my eid gift :')

    Я живу в Иордании, свекровь Палестинка, тоже готовит мамуль на праздники. Вместо воды арабы всегда используют молоко. И размер обычно поменьше , так аккуратнее будут смотреться. Делают маленькие потому что в каждом доме угощают ими, и много просто нереально съесть этого печенья.)

    I am so excited about this video. Ever since my friend first shared with me the date cookies her mom and aunties make for Easter, I've been hoping to get adopted by her family. Their ka'ak bi ajwa are so beautiful, tasty, and perfectly shaped, that I figured them well beyond my rudimentary baking skills, but you and your mom have given me hope!

    Thank you for your response. I didn't throw it out. Haram...so much smeed and so much butter and so much love. I just added more smeed and mixed it. Now it's sitting.     Use orange blossom water for the walnuts and pistachio filling and put ghee and syrup instead of sugar

      God bless you too! My family is from Bethlehem, which is where Jesus was born. Essentially Palestinian Christians are descended from the very first Christians. ;)

      Palestinian Muslims also make these and Middle Eastern ppl in general .
      I was recently gifted some home made ones for Ramadan. I never used to like them. Had store brought ones . But now I have changed my mind. They’re delicious and very special work of art for friends and family on a special occasion .
      They also remind me of some oriental bicuits and moon cakes. I wonder if there are any influences from East Asia. I like the history of food also .

      StFrancis1982 these cookies are not a Christian tradition. Palestinians in particular and arabs in general make them when celebrating religious holidays whether you're Christian or muslim. In few days I'll be making some my self as we are celebrating the end of Ramdan ( fasting month) and breaking our fast at the Eid Al Fitr. Have a blessed day

      Rasha Jouhar of course... I understand that Muslims eat them as well for the holidays. Blanche’s mom especially mentioned that all of the Arabs in Palestine made these cookies. What I find amazing and a nice tradition is that her family and possibly others only eat them for Easter. That’s only once a year! ;) Especially the design of Christ’s crown’s thorns on the cookies.

    SO... In my life I've made lots of different maamoul recipes. And I just made this recipe. Followed the instructions except I added a little bit of orange blossom water and honest honest... I LOVED THEM. They melt in the mouth, original taste, plus my whole house smells lovely and they do keep their shape. 💯/💯

    a family friend who is syrian would bring my family these every easter but she moved away a few years back. I just tried these and they are almost identical to hers! I bought coarse semolina, think i maybe needed to have bought fine semolina, but otherwise they're amazing

    I LOVE that you are helping to create & pass on traditions & memories with your videos, so awesome, and love when your mom comes over too! Do you think this recipe would work with melted vegan butter instead of ghee?

      It might alter the texture, but certainly worth a try--just make sure that once you melt it you add it to the flour only when it's at room temperature, as heated fat will alter the semolina's texture. ;)

    We make cookies that look like this in Italy. They are called Cucciddati or Buccellati. We make them with either an almond filling or a fig filling at Christmas time.

    My dad was famous of doing the maamoul and the cookies with dates for the holiday one thing he use to do in one of the maamoul he used to put clean 25cent in one of then and who ever gets it he will have a very good luck I love and miss my dad Easter was his favorite holiday so he can make them kaek and maamoul mine too

    Looks delicious! You may want to try adding a tiny amount of chopped walnuts and grated lemon zest to the ‘Ajweh filling. And no need to apologize for using your hands. Clean hands are the best tools for mixing ingredients.

    Loving these recipes. I would love if you made one about the clarified butter (ghee) my mom would make tons, but mine never comes out

      Clarified butter is easy. Melt two butters in heavy bottomed pot, boil on low, don't stir. There will be crystals forming on the bottom and foam forming on the top. Wait untill you can smell nutty aroma, then turn of the cooker. There should be no foam but a film on the top. These are proteins. It's custom to strain it over cheese cloth or coffee filter. Removing these proteins will allow you to store it in room temperature for about one month safely. I store mine in fridge for months with no problem but it hardens in cold climate or fridge. And needs to be melted before use. If the ghee is used immediately it can be used alone these proteins it gives nuttiness to it.

      There is generally difference between ghee and clarified butter. Ghee is cooked on the stove untill golden brown and gets yellow when cooled down. Clarified butter is only melted and strained. It is not browned or dehydrated. There is also browned butter which is used in French cuisine where the butter is only browned but not strained. Hope it helps

      HI Leslie, thank you for your feedback! This recipe is for the date cookies, but not the walnut version. We did add 1 tsp. cinnamon
      1/4 tsp. nutmeg
      to the dates. Now if you want to try an alternative with walnuts, you can use 3/4 cup chopped walnuts (or even pistachios) 1 tsp cinnamon, 1/4 tsp nutmeg, and 2 tbsp confectioners sugar. You can also add 3 tsp orange blossom water to the walnuts if you wish.

    Awww!! This totally brings back memories of making these in the kitchen with my mom!! And id always be the one doing the decorating too 😂 so glad I finally got around to watching this. Your mom killed me with the “mom, what kind of flavor would you say Mahlab imparts?” “It’s a.... ok just add it” 😂😂 love it! Also, sometimes these aren’t my favorite only because sometimes they get so dry, but your dough looked BEAUTIFUL! I’m glad you posted this so I can use your dough recipe! Kol sana e entu Salmeen ❤️
