  • WOW and YUM! One of my all-time favorite cookies! Ever! They had these Italian/Jelly Cookies at my local bakery growing up and I have loved them ever since I was a child. I had no idea how to make them until now, and, you know what? It wasn’t that hard! If I can do this, you can too.

    A nice quick recipe that is so delicious and also looks pretty are grandsons which are teenagers just love them especially with the chocolate and the sprinkles enjoy watching her so much such a pleasant young lady

    Ovens can have hot spots, rotate cookies halfway to avoid uneven cookie browning. Also, since your first row of cookies were skinnier than the doubled up ones, they will bake faster- so for the thinner cookies I would probably take them out at 8-10 minutes. Generally putting the same size cookies will make baking more even. Good ideas for a sandwich cookie!

    For filling the pastry bags you can put the bag in a cup, fold the bag over the cup and fill the bag with the dough 😊

    Cornstarch slurry added into the jelly on stove top will help give the jelly that thickness that we expect form the bakeries!

      @@sonicfreak04 no. I let it cool because sometimes it’s not as thick as I’d like or it’s too thick. I put it on just short of warm because then it adheres to the cookie but I can still tell what texture it’ll be.

      @@sonicfreak04 if that happens just warm it back up again :) it’ll go back to an easier to spread consistency and then cool back down to the thicker jelly

    Are these crunchy or soft cakey cookies?

      Good question! When they are fresh (no more than a day old) they are a softer cookie. If left out, they get more “crunchy.” If you put in the refrigerator, they absorb some moisture and get soft when left out to room temperature. I hope that helps.
