    CHICKEN WRAP
    6 pieces boneless chicken thigh (~500 gr /1.10 lb)
    3 cloves of garlic
    1 hot green pepper
    1 red pepper
    1 carrot
    5 cloves
    1 tablespoon isot
    1 tablespoon red pepper flakes
    1/3 cup water (to mix the spices)
    1 teaspoon salt
    1 teaspoon black pepper
    2 tablespoons olive oil
    2 tablespoons hazelnut oil
    1 teaspoon red cayenne pepper
    1 teaspoon cumin
    1/4 cups water
    1/2 bunch parsley
    1 Lemon
    2 lavash breads
    *As a substitute for isot, you can use smoked red pepper or red pepper flakes. If you don’t have any of them, you can also use bbq sauce :)
    • Take out all peppers’ seeds and dice them.
    • Peel 1 carrot with a knife, this way you are not going to waste carrot. Small dice carrot but with the woody part at the center. This part is less sweet
    • Crush 3 cloves of garlic and dice them as well.
    • Dice 6 pieces of boneless chicken thighs around 1 cm cubes. You can use chicken breast if you don’t have thigh. But please add 1 tablespoon butter to make it tastier while cooking.
    • Then crush 5 cloves in a mortar.
    • In a small bowl mix 1 tablespoon of isot and red pepper flakes. İsot is a kind of red pepper that originated in Urfa, Turkey. The feature of isot is, after harvesting they slice, take the seeds out and sun dry the pepper and this way it has its special dark color and taste.
    • Add 1/3 cup hot water to peppers, mix and set aside. The reason to add hot water is for waking up flavors. Also, to use this water to wipe ingredients that stick to the bottom of the pan.
    • Add ½ teaspoon of salt and black pepper and 2 tablespoons of olive oil to pass all flavors each other and mix it.
    • For one wrap, in a large pan, preferably copper, add 2 tablespoons of hazelnut oil and heat it. If you do not have copper pan you can use aluminum or enamel pan instead of copper. The reason I am using copper pan is, it can heat and cool faster compare to other pans.
    • After oil gets hot, add half of the chicken to the pan. If you add all chicken from very beginning to the pan, the heat might not be enough to cook chicken thus, it might lose its delicious juice and start to boil rather than sear.
    • Ensure all chicken pieces are seared and colored.
    • After all chicken changed color, stir and add half of the carrots because it will take more time to cook, then the peppers.
    • Add half of crushed cloves, half teaspoon of cayenne pepper and cumin. Keep stirring to pan and add half of diced garlic.
    • When the chicken is almost cooked, add half of spicy water to wipe out all the flavors that stuck on the bottom.
    • After this add half of diced peppers and a pinch of salt.
    • Keep stirring until peppers are cooked. Add a little water and turn of the heat. Clean the pan with your spoon or spatula.
    • Then transfer all chicken to another pan and cook the second batch as the same. Before that press, your lavash bread to pan to soak up all the flavor.
    • After the second batch cooked, combine all chicken in big pan and add 1/4 cup of water. Turn the heat on high.
    • Put a lavash (or tortilla bread) on pan and press to heat and soak the flavor from sauce.
    • Set the lavash on cutting board and place chicken on lavash and add ¼ bunch of parsley. You can use rockets or coriander as well.
    • Squeeze half lemon and wrap it.
    • To the same for the second lavash and enjoy your chicken wrap.
    Ayran
    5 tablespoons yoghurt
    500 ml cold water (2 cups)
    SaltSome ice
    Fresh mint leaves
    • Add 5 tablespoons of yoghurt in a jug and whisk it until get creamy.
    • Add2 cups of cold water and salt to taste.
    • Mix again
    • Put some ice in a glass and pour ayran.
    • Garnish with fresh mint leaves or dried mint.

    Thanks Rafika, it's a great recipe! I substituted Cayenne pepper for sweet paprika and carrot for red onion. The end result was amazing and smelled even better...even when I washed the pot in the morning 😂

      @@Refika that is such a mouthwatering recipe and similar to the awesome Tantuni we had in Mersin.... my kids loved loved it and still talk about it when we talk about our stay over there 4 years ago. So would that be similar to the one in Mersin? I know that it is traditionally done in a special heating pot and the fixings of it are all kinds of pickles and there's a version of it where they pour yogurt and paprika over the wrap. How would you do that? Thank you!

    Hi Rafika, I'm from Barcelona, Catalunya (Spain) here we speak català and I always had heard that the "culleres de boix" are the best for cooking, culleres are spoons and boix is the boxwood / simsir but I don't know why, now I know, also we use olive wood spoons I suppose it's for the same reason.
    And here there are a lot of artisans that hand make cooking utensils, they sell at crafts or food fairs.
    I've been 3 times in Turkey and I love this country, one of this travels I go to Capadocia and I fall in love with this region, the landscape is out of this world, love the houses and churches inside the rocks.
    I'll love to travel again and again because every time I discover new things or revisited old ones that I love.

    Just hearing the ingredients in this recipe, I know my mother would have adored it since she loved spicy foods.     Hi Refika, I absolutely LOVE your genuineness and spontaneity and the way you are so conscious about the environment and about being frugal with the food, which seem to come so naturally to you, not faked at all! I am so frustrated and disappointed with "cooks" that try to make everything look perfect on camera and in the process lose a lot food (don't scrape the pots fully, use a lemon for a squeeze and throw it, etc.).       Hey there! I am a vegetarian too. You can use chopped soy meat or mushrooms. It all taste great 😉 The best thing about Refika is that she gives the tiniest details that makes the food delicious so you can arrange the recipe to your taste and make it vegetarian very easily 👌

    You are such an amazing person. I love the fact that you bring the seeds to the seed bank and the organic waste gets put into compost. You are the only chef I know that peels the carrots that way. I was taught that way by my dad. When ever I peel carrots for my friends, they think I am weird. But it is less wasting.

      Totally agree. I’m half turkish and my grandfather used to cook for us from the time I was born until he died when I was five. I lived in the Middle East for 13 years and so much of the food from that region (and Lebanon) derives from Turkish cuisine. Wonderful.

    "Ayran" is basically what we call "Lassi" in Pakistan. We have a lot of other variants for lassi but salty and sweet lassi are the most famous ones in Pakistan and Mango lassi is quite famous in the West as a part of Pakistani and Indian cuisine.

    I don't have isot (aka Urfa Pepper) readily available to me in the USA but based on the raisin-y flavor profile, I am guestimating that the closest approximation would be the Pasilla Pepper even though it is lower on the Scoville Scale.

I made these 2 recipes for my husband and I (using whole wheat flour though he just got a heart attack at 39 and we need to eat healthy). We loved it!!! Would love to show you pictures! What I love about his cuisine is that a lot of healthy fats are used and lots of vegetables; but what I love the most is the spices! They make any healthy (sometimes boring) food into something exciting. I love it and your shows. I will definelty make my way to Istanbul FOR SURE and would love share share a meal as well!     My husband is Turkish. Sometimes he buys me "mystery ingredients " 😄 I have this Pul Bieber that I didn't know what to do with. So in a rush I used it thinking...."well, it looks like ISOT". My lips are on fire now 🔥. My husband just smothered the dish with yogurt . Ingredients matter. Lol I've been to Turkey twice. This country, it's food and people are amazing ! Love your videos. I learn something new each time. ISOT is not Pul Bieber.😀

    I love you & your recipes. I live in USA, but originally from India. During weekends I only cook Turkish food. We also have ‘Ayran’ in India, & we call it a ‘Lassi’ (sweet & salt both). You should try once with the sugar (no salt😉) as well, & let me know if you’d like it!

    WOW! What a ray of SUNSHINE you bring through the waves of the Universe over here to the USA - greatly needed & chosen - I think I would enjoy living in Istanbul better than here! These recipes are so full-bodied and LUSCIOUS! Every single one of them. Because I am now eating according to the "Bright Line Eating" program (pure science), I'm trying to figure out how I can break your recipes down into 'grains', 'protein', 'fat', and 'vegetables', 'fruits'. There is no SUGAR or FLOUR of any kind in this program, so I am working around your loaves of bread used. (LOVE BREAD) (: But... I love losing weight and being stronger better.
