    Ingredients:
    2 pounds beef chuck, cut into 1 1/2-inch pieces
    Kosher salt
    Freshly ground black pepper
    2 tablespoons vegetable oil
    2 tablespoons butter
    2 medium onion, diced
    4 garlic cloves, finely grated (20g)
    3-inch piece of ginger, finely grated(20g)
    30g 70 % dark chocolate
    2-3 tablespoons curry powder
    500g potato chunks
    250g carrots
    1 apple
    1 Japanese curry block
    2l hot water
    Instructions:
    Season the Beef:
    Generously season the beef pieces with curry powder.
    Sear the Beef:
    In a large skillet over medium-high heat, heat the vegetable oil.
    Add the beef and cook, flipping once, until deeply golden (about 3 to 5 minutes per side).
    Sauté the Aromatics:
    In the same skillet, add the diced onion and cook until soft (about 5 minutes).
    Add the finely grated garlic, ginger, and diced apple. Cook until fragrant (about 1 minute).
    Create the Flavor Base:
    Pour in boiled water and bring it to a simmer.
    Lower the heat to low, transfer all ingredients in the skillet to a soup po , and continue to simmer until the beef is tender (about 40mintues)
    Add curry block, potatoes, carrots and dark chocolate to the pot, simmer15 minutes until potatoes are cooked.
    Serve and Enjoy
