I love when a chef gives options for each stage of a recipe so that one can customize it to their own liking. Bonus marks for using Nilla wafers - so expensive but absolutely worth the price. Please come back to #Food52 many more times. The 2nd weekend of October is Thanksgiving here in Canada and this will definitely be a desseert option.

I like to make a meringue with a little sugar for the top of my banana pudding. Adds an extra lightness when you take a bite. I am going to try that caramelizing. Looks terrific.
