Mexican Rice Skillet and Chocolate Orange Pound Cake

- Mexican Rice Skillet and Chocolate Orange Pound Cake

Mexican Rice Skillet
Ingredients:
1 small onion diced
1 pound ground beef
2 tbsp taco seasoning
1 tsp garlic powder
½ cup salsa
Salt and pepper to taste
1 cup white rice
1 ½ cups beef broth
8 ounces tomato sauce
1 can, 15 ounces whole kernel corn, drained
1 cup Fiesta blend shredded cheese
Instructions:
Using a large skillet, brown the ground beef.
Sprinkle with salt and pepper
Sprinkle with Taco seasoning and garlic powder.
Stir until well mixed
Add in the beef broth, tomato sauce, drained corn, salsa and the rice.
Stir to combine
Cover the pan, bring to a boil.
Lower the heat and cook for 18 to 20 minutes, until the rice is tender
Sprinkle the cheese on the top, cover again and let cheese melt for 5 minutes

Chocolate Orange Cake
1 (16oz) Sara Lee frozen pound cake, thawed
1 (12 oz) jar orange marmalade
1 (16 oz) can chocolate fudge frosting
Cut cake horizontally in 3 layers
Place one layer on cake platter
Spread with half of the orange marmalade
Place second layer over the first
Spread remaining marmalade
Top with the third cake layer
Spread frosting on top and sides of cake
Refrigerate before serving
Serve and Enjoy !!!

I usually just use a knife, I've never tried using dental floss but I will the next time. This cutter works good but it is tricky to line it up.

Loved the video of the rain and the garden. Sometimes it's just nice to have a rainy day to stay in and cook. Your gladiolas are beautiful. I've aways loved them but i don't get enough direct sun to grow them. My sister used to make a variation of the layered Sara Lee cake. I hadn't thought of it in years, but it reminded me of her. Thanks for pulling that good memory to my mind. She passed away four years ago, and I sure do miss her and her good cooking. The hamburger dish looks and sounds delicious. I probably would omit the rice as I'm not too fond of rice and with the corn I try to stay away from too many starches.

Glad to see you got some rain! Your garden will love it! This is a delicious looking meal. I like recipes that can be made in a skillet, less dishes to wash. Marie, I love that cake cutter you have! I usually cut a cake with thread or dental floss. Just wrap it around the cake, crisscross the ends, and pull it through. Thanks for the quick & easy cake recipe!

That cake is a great idea for a quick dessert or treat to have with tea/coffee if someone drops in. I guess I better get a pound cake for the freezer!! 😊
My usual go-to emergency dessert is a berry crumble. I make sure I always have a bag of mixed berries in the freezer. I put some in individual dishes with a little sugar and cornstarch, and make a quick crumble topping. It takes no time at all...by the time the oven has heated up, the individual crumbles are ready to bake. If I have some ice cream to serve with the warm crumble, it looks like a "fancy" dessert. 😊

Update! Made the Mexican skillet tonight and it was delish! I added half can of green chiles and replaced half of the corn with black beans. We have plenty for lunches the next couple days. Thanks for easy and good recipes! Hugs to you both.

Calvin n Marie, This is my second Mexican recipe video I’ve watched tonight ! Y’all all killing me here!!😂 I just can’t understand people who don’t like Mexican food…kind of like I don’t like garlic…lol!! I love these easy meals…and this one is certainly a keeper! By reading your comments several people have tried it and love it. Sounds good to me! I make a Mexican Chicken dish that I found when I lived in Shreveport, LA. It is really good..not healthy but good. You may have already made it. It calls for chicken shredded, tortilla chips, Velveeta Cheese and chicken & Mushroom cream soups and RoTel Tomatoes with chili peppers. I use mild. Like you two, anything Mexican needs sour cream!! Love the color of your shirt, Marie. My Daddy used to wear shirts like Calvin’s with the pocket. This video was 3 weeks ago but I’ve been pretty sick with a bad infection that the antibiotics did not even touch. It was very painful. After a culture the dr gave me a more powerful antibiotic for the type of infection I have and I am finally responding to it. It has been a month. Take care my friends! 🙏🏻🙏🏻💜💜

Definitely gonna try both of these....the cake would be so good with vanilla ice cream! Marie...next time you're in Walmart go by the vision center & ask them to put some silicone nose pads on your glasses...those are the best for keeping your glasses from sliding down. I had the same problem too until I got those. Just thought I'd let you know❤

Joan, we don't have a cookbook yet. We were wanting to make one two years ago before Calvin was diagnosed with cancer. He just hasn't had the energy or time to work on it since. He still says that he wants to put one together for us if he can.

Do you have an update on Calvins cancer?
@@JoanHackney Calvin went through chemotherapy, radiation treatments and surgery in 2022. He was on immunotherapy treatments for all of 2023. He is cancer free now but he can only eat small amounts of food due to the surgery which removed 1/2 of his esophagus and 2/3 of his stomach.

Dear Calvin and Marie. Your Mexican rice dish is lovely but being conscious of our health( I’m 74) I know you guys are younger but please consider leaving the extra salt out of this recipe. As you probably know, when reading the ingredients on prepared foods and seasonings, the things listed first, has the greatest Quantity. On the Great Value Taco seasoning, the salt is listed first. So when you add your own salt, you are getting way too much salt in your dish. Too much salt is bed for us, especially at our age range. And I care about your health, so please consider leaving out or at least using g a lot less of your own salt. I hope you will take this as construe criticism or advice because it comes only from my caring heart. Amen
