Hi there, my Norwegian friend made this cake for my birthday 5 years ago and I have not been able to get it out of my head. I’ve lost touch with her before getting the recipe from her and plus I often get intimidated baking :( I recently decided to try making it and I found your video and I made it yesterday. It was a success, it was perfect, everything I dreamed about 😆 Your recipe was detailed, to the point and simple to follow. Your video is perfect as well, the music went perfectly. I have a short attention span so I can’t follow long videos so this was a tremendous help! I did take me longer than the proposed 1 hour to make it but it turned out so good that I’m much more confident about my baking now and will attempt more stuff. I introduced this recipe to my sister in Vietnam (I’m in the US) and she made it for a New Year’s party, it was so good that some of her friends begged to pay her money to make it for their parties. I just want to say THANK YOU from the bottom of my heart. Please know that sometimes with just a simple recipe it can make people’s day, unlock memories, nostalgia, and connect people. I wish there was a way for me to send you a photo of what I made lol
Made this yesterday and shared with a neighbor! It is probably my favorite cake and so versatile. For the winter holidays I may brush the bottom cake later with a little rum/brown sugar. It is wonderful by itself. I agree with author- I like a more custard than whip filling but I made it as the recipes states and held any adjustments after cooking per original recipe. Next time I will double the custard and maybe decrease whipping cream to 1 cup or fold in as much to taste and preference as I go. Pan size I used was 12x16 and spread to within 1 inch around pan. The cake layer was just right. I think this meringue quantity is perfect - do not decrease! It is the icing, texture and drama of the cake ! The edge scrap crumbs were a perfect treat for the baker while assembling. 🙂 Thank you for the gem of a recipe.
Hello! This is almost Kvæfjordkake, but not quite. It is "Verdens Beste". Kvæfjordkake uses vanilla-rum filling while this one (Verdens Beste) uses a vanilla filling. They are both good, and lots of Norwegians mix up the two as they are very similar. :) Just thought I'd clarify.
