Great cook! We usually have plenty of beets as well from our garden, so they are always a staple on Thanksgiving. Roasted, whole skin on, quartered but not completely, and drizzled with a balsamic reduction....very tasty. They also really add a vibrant splash of color to the dish.
I've found with Fall veggies, squashes, parsnips, late harvest carrots, sweet potatoes, is the local grown farmers eeasier to work with, slice easier, roast better, taste the best. fyi.
