Simple dinner inspo: chicken and veggies roast

  • I find it easy making roasts, as you just pop everything in the oven and let it do the work. This chicken and vegetables combination is so simple and tasty! Served with parboiled white rice.
    Ingredients:
    Chicken pieces
    Potatoes
    Onions
    Red pepper
    Roughly chopped garlic
    Salt to taste
    For the marinade:
    50g tomato paste
    1 tsp thyme
    1 tsp curry powder
    1 tbsp chopped garlic
    4 tbsp olive oil
    60ml hot water
    Salt and pepper to taste
    Instructions ~ mix everything together and marinate chicken for 1 hour and more. In a roasting pan and potatoes, onion, red pepper, garlic and salt, add your chicken on top, add more water in the marinade and gently pour it on top of your veggies, cover with foil and roast on 200 degrees till everything is cooked, take out the foil and brown your chicken to your liking and serve.
