How long did you soak each time?
I can't give you a certain length of time. However, as they were being peeled they were put whole in the bowl of water. When they were all in there I poured that water off and put fresh water in. As they were cut up, I put them back in the water. So the first two times they were in the water at least 30 minutes each time probably more than that but not even an hour. The third time when I put the citric acid in, they were in that probably another 30 or 40 minutes. Hope this helps. Thanks for watching.
Do you always need to blanch potatoes
That is considered the safest way by the organization that tests canning food. I know there are a lot of people who don't and at one time I didn't either I just raw packed them. However, I try to do everything in the safest way possible to avoid anyone getting sick. It only takes one time of someone and getting seriously sick to make you wish you had done it in they approved manner. And the thing is, you never know when that one time will be, so I prefer to not tempt fate. Hope this helps. Thanks for watching.
How long will they last canned? Also, do they just sit on a dark shelf after?
The official word from Ball canning is a year and a half. Personally, depending on what it is, to me 5 years is not too much because mine stay in a very cool, dark room. By cool I mean a temperature in the lower to Mid 60s. You will have to make your own decisions on how far you're willing to go. Thanks for watching.
