We make the vegetable soup every weekend now, it has become a staple! I add a dash grated Parmesan for depth of flavor and sometimes mushrooms. We eat it with brown rice and sometimes fish or shrimp on top (with extra parm). Love that recipe!

YOU ARE AWESOME!!! I'm from Guatemala and I used to eat really healthy, I've moved to Italy 3 months ago and I've been eating tons of pizza, pasta and all kind of delicious but no so healthy food. This year I decided to go back and eat healthy again but I was willing to try some new things. I started looking... lots of recipes seemed not tasty at all, way too complicated recipes or people was kind of annoying so didn't finish watching the videos haha, it was kind of a fail haha. I think that the soup would taste even better if done on a regular pot. You could brown the onions, carrots, celery and garlic before putting everything else and the flavors would be more complex and delicious :)
Or in a instant pot were you could brown first then slow cook all in one!.. without having to be worried about leaving home while something is on the stove..

Awesome video! Instead of adding corn starch to extra water, take a bit of the sauce instead. All I do is take about a 1/4 cup of my sauce and put it into a mug or bowl along with some of the corn starch

I completely agree. Browning and slightly cooking the vegetables prior to adding stock makes a visible difference :)

Awesome video! Instead of adding corn starch to extra water, take a bit of the sauce instead. All I do is take about a 1/4 cup of my sauce and put it into a mug or bowl along with some of the corn starch
