It's becomes patchy because it dries so fast so I would suggest you to don't pour the varnish directly, first dip your brush in varnish then apply it. And try to do it fast as possible so it won't look patchy

I'll suggest you try spray varnish from next time ya varnish se pehle ek baar patch test krke dekh len

It's safe usually if your painting is completely dry but still you can do a patch test on small area before varnishing your whole painting
