    Finally someone teach you how to use the calamanci,ha,ha ,you can use the calamansi if you have grilled pork,chicken,fish etc just include the soy sauce,fish sauce and chili enjo guy's

    Dont forget the crispy pata and balut. A must try when in the philippines. Also you may even want to visit a billards bar where efrin reyes started out playing in pampanga.

    You also need to go to Didi's and try the Pizza Burger. Toll House is another place where you can try Filipino food.

    I am from northern mindanao and i am so jealous you guys dining in (‘Aling’ means Lady and Lucing is her nickname). Lady Lucing’s restaurant where sisig started. I only saw her on tv, i do hope that i could be able to experinece it too someday. May Aling Lucing’s soul rest in perfect peace. Stay safe and Godbless you guys.

    I'm glad you not only tried Aling Lucing's sisig but also went on to research a bit of history to the name. If I remember it right, Aling Lucing's husband was charged with her murder which their children did not believe... Anyhoo, my best sisig was Aling Lucing's which I got to try back in the 80's. That was a time when sisig can mostly be found in Angeles City. So we had to travel to Angeles very time we want sisig. We also tried the other sisig stands there located near the riles (railroad tracks) which are also okay.

    Lucing is the nick name or first name... "aling" is an endearment to older female meaning old miss or ma'am.

    KMJS just said Aling Lucing passed away on year 2008.. Im pretty sure many of us Filipino's didn't know about that robbery and that killing incident.. sadly but the thing is.... Even the Queen has passed away...THE ROYALTY REMAINS!!

    it's really good with rice as a meal, but if you want to drink beer with sisig, we usually don't eat rice with it. it's really our best beer match or partner. same with the grilled bangus

    you might also wanna try the sisig with egg and mayo. the trick with sisig , especially when placed on your table really hot a sizzling is to immediately mix it thoroughly so as not to get the bottom meat ,touching the hot plate, all burnt and bitter

    Glad you are both ok! Sisig looks delicious (except for the liver. No internal organs. No external organs - for food anyhow) although the story behind it is really unfortunate. Always a fan of how you include informative content in your videos in a fun and positive way. And kudos for the nod to the late Anthony Bourdain the end. Added a new dimension to the video.     If you guys are still in Pampanga Try to visit Claude Tayag as well, Anthony Bourdain ate in his house/restaurant. He will give you insight on Filipino food and its history.

    Yep, sisig is really what Pinoys pair with beer. It's called pulutan which is roughly the equivalent of tapas in Spain. Also, Pampanga is known as the culinary capital of the Philippines though this claim will probably get disputed by other culinary regions. I love Kapangpangan food.

    Aling Lucing Sisig is different as its not cruchy like you see in restos. Its grilled rather than fried before putting in sizzling plate. It has a smoky taste from the charcoal.

    In the northern Philippines we have our own version of sisig ,we put pig's brain not mayonnaise,we call it dinakdakan or warek warek.

    The 'Aling' is added as a form of respect because Filipino society is based on respect for elders and we don't refer to elderly by their first name, so we addi 'Aling' before their name. 'Aling' means older lady or something like that. And her name is Lucita but Filipinos like to shorten names and create nicknames by adding "ng" at the end of the name's shortened form - so Lucita becomes Lucing.
