4:08 Sir citric acid and ascorbic acid is absolutely safe as well as good.. class 1 is fine but benzoic acid (which releases benzene when heated) and sulphites are not.. they deplete immune system slowly.. please don’t compare peanuts here.. it’s a different story. Research says isralean kids who eat bambu (their first food with peanuts) never had peanut allergy whereas the ones who migrated to uk and grew with their no peanut food had allergy when they exposed to it back home in their later stage of life .Early exposure introduces its protein to body. We can’t swear by corporates that they really worried about people’s health and uses only positive preservatives..

Mr. Krishashok, the point that you made is that these preservatives are not harmful. I don't have any source/proof of disagreement. But I have seen people with poor digestion recovering when they cut/ minimize the consumption. Just as no size fits all, these preservatives may not be harmful for people with good immunity but same does not hold true for people having immunity over a spectrum.
Most of what you presented here seems true but preservative don’t seem to be as harmless as you are portraying. The signs of interaction of human immune system to the preservatives is still very much evolving and it’s similar to what expert used to say 50 years ago about smoking. Our biologic system is not kind to most of the things which are not natural, so passing any clear judgment on preservative at this time is very difficult.

We debunk Ayurveda or any traditional food practices as lack of evidence. Are there any double blinded studies done on this. Divide people two groups one never eats food with preservative and other group eats say once a week different types of packaged food with preservatives and see over a period of few years any difference between them. Assume both group does regular exercise. I am talking about India context, countries like Japan might eat packaged food, but they have high quality standard and less corruption. We are not sure how authentic FSSAI certification. We just can’t ignore the research on possible harmful effects due to preservative. There are too many variables here, manufacturing quality, authenticity of food labels, more importantly how an individual body will take these preservative, everybody is made different. Its naive to reduce this to just scare mongering without fully understanding it. Moderation is very tricky term, it changes from person to person, there is no universal rule.

Sorry can’t agree with you on this occasion. India is one country which could afford to avoid ultra processed food because fresh fruits and veg are abundantly available and cheaper, cooking fresh food is still a practise in many household till this day and people embraces changes quickly when it comes to swapping modern to tradition eg food, cookware, medicine or fashion. All they need is proper sensible advice that’s all. Percentage of Cancer was less in India than western world 20 years ago but now things have changed. One major cause is surely eating habit. Organic unprocessed food is the best and changes may be hard initially but very much possible.
Fresh food abundantly available? Fresh food can be cooked daily in most homes? Probably in rural India not in the rapidly increasing urban regions and there's an alarming shortage of arable land nowadays 😢 So no, we are expanding our infrastructure and even though we are dependent on farming practices , the food on the table in maximum of households is usually not brought Fresh from the farm😂 Even the rice we eat is not the native strain but genetically modified to increase yields and decrease hunger in the green revolution. The surge in cancer is due to a lot of reasons and processed foods haven't yet been identified as the reason of cancers except perhaps nitrites in foods like pickles and roasted foods. More important reason of cancers is air pollution, cigarette, alcohol, sedentary lifestyle. There is an association of breast cancer with parabens but as far as I remember it's not conclusive.

Prunes are usually packed with preservative. Eating 1 or prunes every day is good for health as it contains fibre. Does this habit cause problems as it is impossible to find prunes or such without preservatives esp for kids?
Every packaged product has additives/preservatives in small quantities however all together add up to a certain quantity. The question is this total average amount of preservatives that we consume is putting us on how much risk? Example Milk has some preservative, eggs have some antibiotics, bread has some preservative, cookies have palm oil, sugar and preservatives, pesticides on fresh food so on so forth..
This adding up business misses out on a very basic fact - things are either entirely fully metabolised into harmless things OR eliminated via large intestine or kidney. So I’m not entirely clear on how things “accumulate”. That is not how the body works. Sure, if an ingredient does a specific kind of damage, like kill gut microbes, and you eat a lot of it over a long period of time, you will do damage, but that is my point! Moderation! If you stop eating chips for even a week or so, your gut bacteria population improves!

The natural preservatives are ok, but many people have problems with synthetic ones. Its ok if you have the luxury of having your own kitchen and are able to avoid these chemicals, but many people have to rely on food prepared by others and are at the mercy of their choices. Here in Australia, the amount of preservatives and additives added to food that cause sickness in many people are a problem for a lot of people. I am one of the "very small amount" of people that are allergic to sulphites, but there are other so called safe additives that cause reactions with me as well. It makes travelling and eating away from home very problematic for me.
Had a buddy who would read the labels of every packaged food and pooh pooh it. Would buy an equivalent in Whole Foods with 3x markup. Ironically, every other day, he would eat parotta (frozen). Was simply quite a spectacle to see.
@krishashok I'm more concerned about the adulteration that could be involved with the preservatives than the preservatives themselves. How do we make sure that the companies(mostly small local companies) are using the actual standardised preservatives and not some adulterated cheaper versions? I'm not confident on the quality control. I'm not talking about the big companies here. I can still give the benefit of the doubt to big companies and trust them. But we know there is a lot of corruption and adulteration of many things in India. How do we know the company has not bribed some health official to approve some actually harmful substance instead of E300 or something? Same concern with colours as well.
So consider these questions. What makes you think "natural, organic" product companies are somehow more honest and will not use ingredients they don't list on the label? Adulteration is an entirely different thing from adding preservatives. Adulteration can be easily detected with simple chemical tests. If a company has an FSSAI rating, then it has undergo those tests. Of course, bribery is possible, corruption is possible - this is true for "organic jaggery" as much as a local biscuit company. All I am saying is - it's good to understand why something is added and what it does instead of blanket fears

My concern was more about how to deal with adulteration in the food industry in general. It could be in preservatives or in "organic jaggery". I understand that could be a different topic altogether.

The general human tendency is to take things easy. So, when you say its okay chalta hain, we would generally not consider the complications food products create and if there are these videos backing all the preservatives, we tend to ignore the harm preservatives can cause and the result is we consume a lot of such food not having a check on what we are eating. So, i personally think it is always wise to consider the risk and dangers any food can cause. And any day, fresh food is the best choice be it for main meal or snack.

I am an Indian in the US and we tend to buy many ready-made products to make cooking easier and faster. These days I am trying to reduce buying processed food because they’re high in “sodium” which social media told me is bad (Which I linked to why I probably have a puffy face every morning) 😅

There have been no longitudinal studies conducted on several food additives, example tbhq and BHA. They are generally recognised as safe "GRAS". Well you can either rely on a very corrupt USFDA, or use your common sense and study the additives in your food

Even he doesn't endorse eating preservative laced food daily, biscuit having even microgram of preservative is being asked to eat occasionally. Follow a simple rule of thumb do not eat anything older than 24 hours more than once a day especially in a country like India where you have thelas/reri selling fresh cooked food in every nook n cranny for a range of prices.
Helping food processing giants like ID,ITC,Haldiram,Pathanjali etc. There is no need to add pesticides,preservstives,anto caking agents ,colour etc to food. When every processed food have these even eating in small quantities is definitely bad for the gut health. Many dry foods can be vacuum packed instead of adding preservatives. Pickles ,set dahi etc become devoid of probiotics when preservatives are added. So commercially sold pickles are not pickled properly and to get shelf life preservatives are addded. Anyone who eats only outside food is very lucky if he survives. He has great microbiome. Advocating people to eat carcinogenic chemicals ,unhygienic restaurant foods is an offence.
I'd urge you to have one conversation with an industrial food scientist before you come to these confidently wrong conclusions. India is a nightmare for food preservation. We have high levels of humidity, high temperatures and huge amounts of dust in almost every place. If you think companies want to spend extra money to add preservatives just for fun, you don't understand how basic business works. If the market wants preservative free food that spoils in hours, the companies will deliver it, so instead of armchair theorizing in the youtube comments section, it might be worthwhile introspecting on why people don't buy preservative-free products at a scale that justifies running a large business.
I generally like his videos but I think he shot himself in the foot with this one. Man should read" Ultraprocessed people" ,recent book which deals with the US Food system, to know the ACTUAL TRUTH about GRAS classification. The EU method of risk assessment is generally called as "Precautionary principle". I don't blame them as precationary principle is generally and sensibly good for things we are putting in our MOUTHS like food and medicine. Rest of the standards can be lax but not food and medicine. The US's so called standards are actually enforced by the Food Industry and I would trust the EU over US regarding this. The truthabout the FDA and USDA standards is known only by insiders and it is very rarely revealed in such a detailed way only by books such as "Ultraprocessed People". I don't mind natural chemicals like ascorbic acid but synthetic ones should be avoided even if GRAS.
Learnt a ton but still disagree with your overarching assertion. Remember the preservative companies “help” decide the regulators what is a “safe quantity for most people”. Example - most people eat less than 3 biscuits a day…! You get the point
There are no preservative companies, just food companies, and the economic incentive is to try and add as little as possible because they don't want something to last forever either. They'd rather sell you more biscuits. In a free market, companies are not moral or immoral - they are amoral and it's all about incentive design. No company wants to get caught adding more preservatives than their competition given the public fear of them.

Ultraprocessed typically refers to food that is devoid of fiber, thus leaving it high carbs, fat, salt/sugar. So consume in extreme moderation.
Would getting factorymade ginger garlic paste make more sense than the effort to make it at home?
The homemade one will taste better, but other than that, go for convenience

I am one of the "very small amount" of people that are allergic to sulphites, but there are other so called safe additives that cause reactions with me as well. Had a buddy who would read the labels of every packaged food and pooh pooh it. Would buy an equivalent in Whole Foods with 3x markup. Ironically, every other day, he would eat parotta (frozen). Was simply quite a spectacle to see.

@krishashok I'm more concerned about the adulteration that could be involved with the preservatives than the preservatives themselves. How do we make sure that the companies(mostly small local companies) are using the actual standardised preservatives and not some adulterated cheaper versions? I'm not confident on the quality control. I'm not talking about the big companies here. I can still give the benefit of the doubt to big companies and trust them. But we know there is a lot of corruption and adulteration of many things in India. How do we know the company has not bribed some health official to approve some actually harmful substance instead of E300 or something? Same concern with colours as well.
So consider these questions. What makes you think "natural, organic" product companies are somehow more honest and will not use ingredients they don't list on the label? Adulteration is an entirely different thing from adding preservatives. Adulteration can be easily detected with simple chemical tests. If a company has an FSSAI rating, then it has undergo those tests. Of course, bribery is possible, corruption is possible - this is true for "organic jaggery" as much as a local biscuit company. All I am saying is - it's good to understand why something is added and what it does instead of blanket fears

The general human tendency is to take things easy. So, when you say its okay chalta hain, we would generally not consider the complications food products create and if there are these videos backing all the preservatives, we tend to ignore the harm preservatives can cause and the result is we consume a lot of such food not having a check on what we are eating. So, i personally think it is always wise to consider the risk and dangers any food can cause. And any day, fresh food is the best choice be it for main meal or snack.

There have been no longitudinal studies conducted on several food additives, example tbhq and BHA. They are generally recognised as safe "GRAS". Well you can either rely on a very corrupt USFDA, or use your common sense and study the additives in your food

Even he doesn't endorse eating preservative laced food daily, biscuit having even microgram of preservative is being asked to eat occasionally. Follow a simple rule of thumb do not eat anything older than 24 hours more than once a day especially in a country like India where you have thelas/reri selling fresh cooked food in every nook n cranny for a range of prices.

There is no need to add pesticides,preservstives,anto caking agents ,colour etc to food. When every processed food have these even eating in small quantities is definitely bad for the gut health.
Many dry foods can be vacuum packed instead of adding preservatives. Pickles ,set dahi etc become devoid of probiotics when preservatives are added. So commercially sold pickles are not pickled properly and to get shelf life preservatives are addded.
Anyone who eats only outside food is very lucky if he survives. He has great microbiome.
Advocating people to eat carcinogenic chemicals ,unhygienic restaurant foods is an offence.
I'd urge you to have one conversation with an industrial food scientist before you come to these confidently wrong conclusions. India is a nightmare for food preservation. We have high levels of humidity, high temperatures and huge amounts of dust in almost every place. If you think companies want to spend extra money to add preservatives just for fun, you don't understand how basic business works. If the market wants preservative free food that spoils in hours, the companies will deliver it, so instead of armchair theorizing in the youtube comments section, it might be worthwhile introspecting on why people don't buy preservative-free products at a scale that justifies running a large business.

Man should read" Ultraprocessed people" ,recent book which deals with the US Food system, to know the ACTUAL TRUTH about GRAS classification.
The EU method of risk assessment is generally called as "Precautionary principle". I don't blame them as precationary principle is generally and sensibly good for things we are putting in our MOUTHS like food and medicine. Rest of the standards can be lax but not food and medicine.
The US's so called standards are actually enforced by the Food Industry and I would trust the EU over US regarding this.
The truthabout the FDA and USDA standards is known only by insiders and it is very rarely revealed in such a detailed way only by books such as "Ultraprocessed People".
I don't mind natural chemicals like ascorbic acid but synthetic ones should be avoided even if GRAS.
Learnt a ton but still disagree with your overarching assertion. Remember the preservative companies “help” decide the regulators what is a “safe quantity for most people”. Example - most people eat less than 3 biscuits a day…! You get the point
There are no preservative companies, just food companies, and the economic incentive is to try and add as little as possible because they don't want something to last forever either. They'd rather sell you more biscuits. In a free market, companies are not moral or immoral - they are amoral and it's all about incentive design. No company wants to get caught adding more preservatives than their competition given the public fear of them.
It's just like saying All the medicines are both fully safe to use and life threatening at the same time.
Right, we can't waste food like some developed countries, and we should not waste food!
