Substitute mirin for plain sugar, sake is a bit more tricky... There is no real substitute but I guess you can use sweet sherry, dry vermouth or white wine. I would recommend just leaving the sake out of the dish, it will affect the flavour but it's not the end of the world lol

U can use white wine or dry sherry. Basically any type of light cooking wine that are found in supermarkets will do.
Yes. It would work just fine with the sauces. You might want to add pepper flakes with it however.
