Looks Bellissimo Christine, I made Paella 🥘 only once, it took me three days of shopping marinating and prep work,lol, thinking I went overboard. I love the way it looks right at service. The appetizer or charcuterie with fresh made focaccia was a lovely start to the evening. Thanks for sharing, wondering what you had for dessert,lol.❤️👍
Many thanks. Ah, you know there was dessert. I made a Greek bougatsa ( semolina custard in phyllo) dusted with cinnamon fresh out of the oven. It was a very memorable evening

Kudos, the artistry! Stunning appetizer platter, so beautiful. Genius to put it with fresh foccaccia, and keep the meaty meats there and not in the paella. Fabulous paella so well organised, love your seafood choices. Thanks for showing all these details. May I ask about your paella pan, I have at least 3 not-good ones. The usual paella pans are so thin they scorch-uneven etc., so annoying, don't like them.A large, heavier cast iron pan is too deep, a shallower heavy pan would be ideal.
Thank you , I am glad you enjoyed all the details. I got this pan in Valencia and they can be purchased in North America also. I prefer this carbon steel that is coated in enamel. It works best on a gas burner. When you have electric heat that's when you get uneven heating and scorching . I have never used the heavy ones.

It looked a little different than the recipe you made a couple of years ago on this channel. Wondering if you have a 'new' preference as to how you make it now vs. then.
