I agree, thighs are the best cut in my opinion I use them in all my Indian, Thai & Chinese curries They are fantastic cooked in the sous vide before adding to the sauce. Dry brine with relevant spices, vac pack then cook at 75C for 2.5 hours 😊

I've came to the realisation that preparation really is the key. You make it look so easy, doing it full time time you are always prepped up correctly. When your organised it's flows just like you say it does.

Got shivers when you got that small serated knife out at 1.36. I got one of those and literally the very first time i used it, not realising how sharp it was caught the end of my finger and sliced a few mm off! The blood, WOW. Excellent little knives. Great recipe. Cheers dude.
