    The holes are so the crust doesn’t bubble up. That’s why you may see holes in the bottom of frozen pizza.
    I once baked a pizza and forgot to poke holes, it was pretty bubbly thick.

      I think it depends on the ingredients in the dough, the cook time, and maybe your preference of dough. Because the pizza I made got really thick, I do have a photo of it, though it’s only of one slice not the whole thing.

    Hi friend. You poke holes in the pie dough so that when it cooks in the oven it won't rise and become puffy with air. Often times we "blind bake" our pie crusts too where you fill the pan with parchment paper and some dry, raw beans or special pie weights since you're allergic to beans to weigh the dough down so it won't puff up and then you remove the parchment, add in the filling and finish baking.

    Poking holes in the pie crust is called Docking. It's so the crust doesn't form air bubbles. :)

    Make sure you let the whole thing cool completely before cutting it! And as for the caramel sauce, if reducing it doesn't get it as thick as you want it, a little cornstarch slurry (1 tsp cornstarch + some cold water or cream) added will do the trick.

    3:25 from my understanding it's to rid the bottom of air bubbles, so when it cooks the bottom is flat and cooks evenly.

    I know what poking holes in a pie crust is for, it is called docking and it keeps the crust from forming a bubble, a trick that my grandma also uses whilst baking pies in addition to docking is to cover it in (food safe and heat safe) saran wrap and then pour a bag of dried beans in the center to keep the crust perfect and flat

    Keeping the butter cold means that it won't melt into the dough as you handle it (which is also one reason why they might advise you not to handle the dough too much). This means that when the butter melts as it bakes, it will go around all the gluten in the flour and stop it from forming long strands. This is why it might be called "shortcrust" pastry, because the gluten only develops short strands. These short strands will make the pastry crumbly and flaky instead of tough and stretchy. (Yes I'm a GCSE Food and Nutrition student)

    I started making apple pies this fall and the first one was a mess cos I cut it too soon! You got to cool it down completely so it will hold its shape plus, you can try partially baking just the crust so it wont be saggy on the bottom ^^

    Just for future reference when making pie crusts or biscuit dough or anything at all where the butter is supposed to stay cold, don't handle it so much with your hands. Warmth from your hands definitely melted that butter. Use forks or a pastry cutter, OR even a food processor you break up and mix the butter into the flour.

    Very similar to Tarte de Pomme (French Apple Tart), I've made it several times before but the most time consuming part is cutting the apples😐, I like the original recipe since it's low-sugar than remake recipes.😀

    Hey David, I would recommend next time to put the apple slices in some lemon juice right after you cut them. It'll stop them from going brown, plus it won't be too sweet once you bake it and pour on the caramel :3

    Fun fact: you should touch/knead the pie dough as little as you can because you don't want to develop gluten (gluten = big and fluffy/ not crunchy and crumbly)

    Poking the holes with the fork helps with not getting pockets of air in the bottom

    the fork thing prevents the pie bottom to swell or even explode cause of the big air bulb building up.
